I always find that I eat pretty healthy during the week, but on the weekends I eat out a lot and often neglect vegetables without even really realizing it. Like today for instance ...

Around noon I was out running errands and got really hungry. The hubby called and he was out and about too, so we met for lunch at Costco so that we could shop/ eat all in one shot. Unfortunately Costco does not have healthy choices in their food canteen. They do however have pretty tasty pizza :-)

The hubby and I shared a slice of pepperoni (they are HUGE), and I also had a few bites of poutine, but it was gross (too soggy). I had a few sips of hubby's coke zero. You will notice that I pretty much NEVER drink pop. The most I have is a few sips here and there, but other than that I never drink the stuff. It gives me headaches and grosses me out.

We went to hubby's parents for dinner tonight (like we always do on Sundays). The spread looked delicious!




The hubby's mom tried a new chicken recipe with stuffing rolled up inside the chicken and a gravy on top. I am sure it was super high calorie - but it was worth it! This is my portion:

I left a little of the rice, but other than that I ate it all. I also had a glass of crystal light ice tea.

This evening I started to get a little bit of a sore throat, so I took some vitamin c and made a little vitamin elixir to hopefully fight off any bugs that may be trying to attack me :-)

1/2 cup 100% pure blueberry juice, strawberries, 1/2 banana blended in the magic bullet.

I am really excited to try some new recipes for dinner this week! I made a meal plan this afternoon that includes 4 new dinner recipes from some of the food magazines that I subscribe to/ and the blogs I read! Stay tuned to see the new recipes over the next few days!

I think eating a little more on the weekend is ok, especially when you're a healthy eater through the week. You deserve to treat yourself. I'm not much of a pop drinker either, just water, tea and coffee.

I love that you always go to your in-laws for Sunday night dinner! Sounds like a wonderful time with family and great food!
