Holy Guacamole!

When we were at the grocery store recently, we saw massive, giant, super-sized avocados


We bought one and weighed it when we got home; it was almost two pounds!  So, naturally, we had two pounds of guacamole.


And where there is guacamole, there has to be tacos.  We cooked up some Cajun shrimp and threw together tacos with the leftover coleslaw from our Southern weekend, sour cream, and loads of guacamole.


A little cilantro-ghost pepper sauce on top, and these were perfection.

A Weekend of Southern Comfort Food

We spent the entire weekend at home, and ate nothing but Southern comfort food.  When we were planning our weekend menu, our wheels would not stop turning.  We ended up making a bunch of delicious dishes we'd never made before, and a some old standbys.  We got started on Friday evening after hitting the grocery store.

First up was chicken-fried steak, with mashed potatoes and red-eye gravy.  We had roasted okra on the side.


This was our first time cooking both chicken-fried steak and okra, and both turned out really well.  Okra is delicious!


On Saturday morning we were up bright and early.  We made buttermilk biscuits and sausage gravy for breakfast.


Our friends Jessie and Chris gave us a bunch of tomatoes recently, and we used some of the green ones to make an afternoon snack of fried green tomatoes.


They were tasty dipped in the Cajun sauce that Christopher threw together.

Dinner on Saturday evening was chili with toppings, and some cornbread that we had made earlier in the day.


We froze the leftover chili and half of the cornbread to have for our lunches later this week.

This morning's breakfast was shrimp with cheesy grits.


That hearty breakfast kept us full for the whole day.  This evening we made big dinner so we'd have a meal for tonight and lunches for Monday/ Tuesday.  We had fried chicken, mac and cheese, baked beans, bacon-bourbon coleslaw, and cornbread.

And if that wasn't enough food and cooking for one weekend, we also made bananas foster for dessert.


Believe it or not, we didn't just get fat cook and eat all weekend.  We also managed to sneak in three or four movies, hours of reading, and a whole lot of relaxing

Goodbye Summer

Well Fall is officially here, and it definitely feels like it.  This week has been cool, rainy, and all-around gloomy.  I started the week out with some pancakes and fruit:


On Monday evening we had a quick dinner (deer sausage, potatoes, salad) before heading to the University to see David Suzuki give a lecture on climate change.


It was wonderful, and such a neat experience to see him live. 

On Tuesday evening we enjoyed king crab legs and corn on the cob.


And then on Wednesday we made chicken noodle soup, with a stock we had frozen a while back.


Breakfasts this week included a lot of fruit:


And oatmeal on the first day of this gloomy Fall:


On Thursday evening we BBQd burgers and potatoes for dinner.


This weekend we're staying in and having a themed weekend of cooking!  Check back tomorrow evening to see what we sorts of delicious dishes we cooked up.

Weekend Things

On Saturday morning we had veggie-loaded omelets, bacon and kale/banana smoothies before heading to the farmers' market downtown.


In the afternoon Christopher whipped up some more of his amazing ghost pepper cilantro sauce, and a big batch of homemade salsa.  We're now officially hooked on both.


The rest of the day was spent watching movies, playing Scrabble, hanging out, and snacking:


We BBQd chicken for supper and made tacos, with salad on the side.


Sunday's breakfast included buttermilk pancakes, sausage, and scrambled eggs.


We tested out the homemade salsa with nachos for lunch.


They were topped with green and black olives (I think nachos are best with both types, and when they are strategically placed so that each chip has a few), red onion, and two types of cheese.  We sprinkled cilantro over them when they came out of the oven.


Dinner was just leftovers and snacky stuff, but we did throw together a batch of pork noodles for our lunches to start the work-week out right.

Week Re-Cap

Happy weekend friends!  This was a busy work-week for us.  On Monday evening we took my dad out for supper to Swiss Chalet.  He loves getting his chicken and ribs from this place, and I could drink the sauce there (okay, I do drink the sauce).


We wanted some of the limited time, Chalet Sauce Lays chips, but they were out - boo!  We'll just have to go back soon.

On Tuesday evening we drove to Moose Jaw right after work.  We stopped for supper at BPs before heading to see Dolly Parton in concert!!


She put on a great show, and is an absolute sweetheart.  It was a later night than we're used to during the week, but it was definitely worth it.

On Wednesday evening we BBQd burgers and had salad on the side:


On Thursday evening we went to our friends Jessie and Chris' place to meet their new baby Eli, and have some snacks and visits.  They sent us home with a load of tomatoes.


Extra produce never goes to waste in our house.  We have big plans for all these tomatoes.

Breakfasts this week have mostly been cereal, with a banana:

 

I topped the banana with chunky peanut butter, a drizzle of cinnamon honey, and hemp seeds.  I also had a few green smoothies this week (kale, banana, almond milk, a T of cocoa, and a tsp of vanilla).

Yesterday evening we made lamb meatballs, and BBQd those along with romaine lettuce, which we used in a caesar salad.


While we cooked we snacked on olive tapenade and pita chips.


Dinner was fantastic!


We threw this apple crisp in the oven while we were BBQing, and enjoyed it with ice cream later on in the evening.


We're spending the weekend at home soaking up the last of summer.
