Today was a pretty nice Monday - no rain, but beautiful, hot weather! It is shocking that the weather is SO warm here in the middle of September, but I will take it!!

Lunch today was a frozen "Amy's" bowl of veggies, brown rice, and tofu. I love this frozen dinner, as it is organic, has super nutritional stats and tastes great! I am willing to pay the $7 for it (which is a little steep for a frozen entrée). I think it is a little too low in calories however, as it only has around 230 (which is no where near enough for me for lunch).


I also had some strawberries (about a cup):


When I got home from work I wanted to gnaw my arm off. Like I said - not enough calories at lunch.

I sliced up some ham and cheese while making dinner and shared it with the hubby:

I had 1/2 of what is plated here (just a few bites to last me until dinner).

For dinner I made a new recipe from "Woman's Day" magazine. I made Meatballs with Waikiki Sauce:


1) Mix lean ground beef, minced onion, egg, salt
2) Form into balls and bake in 9x13 pan at 400 for 15 minutes
3) Saute a chopped red pepper, add 1 can of pineapple (with the liquid) and some sweet and sour sauce (I used sweet chili sauce - about 1/2 cup)
4) Add the meatballs
5) Sprinkle with shredded coconut
6) Serve over brown rice

and presto ... a Hawaiian meatball meal:


Yuuuuummmmmmyy! I just LOVE the flavors of pineapple, and coconut, and they pair so well with the other flavors in this dish! Easy and delicious!

After dinner I got a little sweaty with a 4 km walk/jog (2.5 miles). I really want to learn to be a runner, as I am always wishing it was me when other bloggers/ friends talk about their races ... one BIG problem - I HATE running. I am seriously going to try and push through over the next little while, and see if I can do it!

I am off to Shopper's Drug Mart to buy some Almond Milk for tomorrows Green Monster :-) Have a great night peeps!

Mmmm, looks good!

I started running last year using an excellent learn to program from a magazine article. This april I ran the RPS half marathon (I am in SK too - Regina). If you are interested, let me know, I'll send you the running program!

I'm with you on needing more calories - it's just not worth it because then you're hungry about an hour after eating! Looks like you had the perfect dinner to enjoy later though!

I hate running too, but have started walking instead. I think that's as far as I'll get though.
