Carb Crazy

I think I have gone carb crazy today!
We are in desperate need of groceries at our house, so there isn't much for veggies etc..

Breakfast was 1/2 a waffle topped with pumpkin butter, and dipped in a little real maple syrup:



We had no "lunch" type food, so I had breakfast food for lunch. A veggie and cheese omelette on 2 slices of toast:





Dinner was 5 perogies with some sour cream on top:



I am going to need all these carbs to help soak up the "water" tonight at the Halloween party I am heading to. Mmm, water.

And since I have gone carb crazy, this is my "Halloween" Costume tonight:

Taking it Easy Friday ...

Sorry for the lack of photos today - just wanted to do a quick and easy post and take a bit of a break from the computer tonight ... so here goes:

Breakfast:
- Oats with pumpkin butter put in the pot while cooking. Topped with chia seeds, almond butter, and 2 walnuts.



Lunch:
- Tiny piece of store bought lasagna that someone brought to work to share
- 1 babybel cheese
- 1 pear

Snack:
- Glo-bar

After work:
- 2 Guinness - it's Friday :-)

Dinner:
- 1 mojito
- 1 mini BBQ chicken pizza with a side of spinach/ strawberry salad and a poppy seed dressing on the side

I am going to take it easy tonight because tomorrow I will be getting up early for a hair appointment, and then going to get ready for Halloween!!

I am VERY jealous of my little sister right now, as she is at the AKON concert at this very moment. Not fair sister-face.

Hey peeps! It is almost Friday!!!!!!!!!! Today stared out great because the hubby woke me up and told me he had made waffles :-0

I had 1/2 a whole wheat waffle with almond butter spread on it, a sliced banana, and a teensy tiny drizzle of syrup:





Lunch was left over tofu and bean chili from the other day (I will spare you the picture, because it looks down-right-disgusting in the pic. It tasted good though). I also had these guys:



I know I have been having this combo a lot lately - but you should see the enormous bag of pears that we bought. And the giant bag of babybel cheese. Delish.

After a busy day at work, I coached a v-ball game, and then went to the lab for a couple hours. I was starving by the time I got home, so supper had to be something quick and easy. I had a grilled cheese sandwich:



That I dipped in ketchup of course. Do you dip your grilled cheese in ketchup? If not, you must try it ... it is the only way my dears ... the only way.

I also had a small bowl of tomato soup, because duh ... they go together:



I sprinkle a couple little pieces of cheese into my soup - it makes it better.

This dinner just didn't cut it for me today. I was still hungry after eating it, and needed something else. I whipped up a quick smoothie containing:

- 1 cup unsweetened vanilla almond breeze
- some blueberries
- 1 scoop chia seeds
- 1 berry apple sauce cup
- 1 pack of amazing grass (berry flavoured) powder





After dinner I made Halloween treat bags for the kids in my class, and now I have to figure out how I am going to dress up for work tomorrow ...

Vegetarian Meal #9 of 10 and Grossness.

Today was a bizzzzzarrro day. I woke up feeling AWFUL. I had a terrible headache that was making me feel sick to my stomach.

For breakfast I made a GM with 1 cup unsweetened vanilla almond breeze, 1 banana, 1 T almond butter, and 1 scoop Amazing Grass powder.



Within 5 minutes it came back up - tasting the same way as it went down.
(Sorry for the details - but it did). Twice.

After that, I started feeling much better. I popped a couple liquid gel pills and got ready for work. I also cooked up about 60 perogies and some onions for my work potluck lunch today.





By about 9:45 I was fine.

For a mid-morning snack I had a glo-bar:



Seriously - these things are ridiculously good. Like crack. (I have never done crack, I am just assuming it is good, because people like it - right?).

We had a potluck lunch today, but I didn't have my camera, so I am going to have to just tell you what wonderful things I had. I had 1 plate that included a little bit of:

- mini meatballs
- enchilada casserole
- perogies
- spinach salad
- pulled pork
- rice
- chili

I took about 1 or 2 T of each thing and ate most of the plate. For dessert I had 2 bites of turtle cheesecake, and 1 mini brownie.

Dinner tonight was vegetarian mean #9 of 10! A favourite standby in our house:

Curried Lentil Soup
(I am totally loving curry right now if you can't tell)

Ingredients:

2 tbsp butter
1 onion, chopped
2 stalks celery, minced
2 cups peeled and finely diced carrots
1 cup peeled and finely diced potatoes
1 1/2 cups canned lentils, rinsed
2 cups vegetable stock
1 cup milk or milk substitute
2 tsp curry powder
Salt and freshly ground pepper


Directions:
  • In a large saucepan, melt butter over medium heat. Cook onion, celery, carrots and potatoes for 3 to 4 minutes.
  • Add lentils, stock, milk and curry. Salt and pepper to taste. Bring to a boil and simmer over low heat for 20 to 25 minutes or until vegetables are soft.
  • Purée soup in a blender or food processor. Adjust seasonings.








My portion:



Served with 1/2 a piece of nan bread (to dip):





I am glad my headache is gone - those pills worked. I used to get headaches more frequently in high school, and now only about once a month. But lately (probably because of how busy life is, and the stress I am under) I have been getting them more than usual. When I go to bed with one, it seems that I wake up with an even worse one.
And I am getting nauseated almost every time I get a headache now.

My stomach is weird like that - I puke a lot, kinda.

If I am super hungry - I barf.


If I ride in a car with standard transmission - I hurl.

If I eat something that doesn't agree with me - I spew.

If I don't get enough sleep - I upchuk.

If I do homework - I vomit.

(Ok, the last one is a lie - but you get the idea).

My stomach just might hate me.

Vegetarian Meal #8 of 10

Okay ... after reading your comments to yesterday's post, I totally feel boring in the popcorn department! You guys put some crazy, yet interesting things on your popcorn! What I am wondering is, what made you want to try new flavourings for the first time?? Are you really that adventurous!? I am a chicken, and never venture beyond the butter or margarine world. Hence, my boring popcorn last night:



You know how a few weeks ago I woke up to snow ...
Well that is all gone now. It was nearly hot last weekend.
And this morning I woke up to pouring rain! This is Saskatchewan weather for ya!

So when it is pouring rain, and cool, and dark, breakfast can only be one thing ...
OATS!



(1/2 cup unsweetened vanilla almond breeze, 1/2 cup water, 1/2 cup oats, homemade pumpkin butter, and pumpkin seeds)

I had a mid-morning glo-bar snack:



Then for lunch I had perogies:



And the terrible two:


(old Cheddar and pears go fabulously together).

I have had more of an appetite than usual today, and by 3:30 I was haaaaaangry!
I had my 2nd LARA Bar:



This one was even more delicious than the last. I am so happy I finally tried these bars.
They are a little on the sweet side, and since I don't have a sweet tooth, I can only eat about 1/2 at a time - but I do love 'em.

Dinner was Vegetarian Meal #8 of 10

Red Tofu and Bean Chili

Ingredients:

- 2 t olive oil
- 3 cups chopped onion
- 1/4 cup chili powder
- 1 1/2 tsp dried oregano
- 1 1/2 tsp ground cumin
- 3/4 tsp salt
- 2 minced garlic cloves
- 3 cups veggie stock
- 1 can kidney beans, drained
- 1 can black beans, drained
- 1 can chopped tomatoes, drained
- 1 can mushrooms
- 1/2 block extra firm tofu
- Cheddar cheese to sprinkle on before serving

Directions:
  • Heat oil, add onion, saute 5 min.
  • Add spices, and saute 30 seconds
  • Add stock, beans, tomatoes, bring to a boil
  • Add tofu and mushrooms
  • Simmer about 45 min. or 1 hr.
  • Sprinkle shredded cheese on top before serving


I just realized that I didn't eat very many fruits/ veggies today. Guess that means I should have a GM tomorrow morning.

I really try to get my veggies in everyday, but some days (like today) I realize that it just didn't happen. No sweat. I will just have more tomorrow :-)

How do you maintain balance in your diet? Do you strive for a certain # of servings of the different food groups, or just eat what you feel like eating?

Vegetarian Meal #7 of 10, and a LARA bar!!

Good evening! I hope everyone had a good Monday, back at the daily grind! Mine was pretty good - it was nice outside, so that was something to smile about.

Before I forget, last night I ate 2 scrambled eggs with hot sauce on them. I was craving eggs for some reason, so I think it meant I needed protein:



Here are my eats from today ...

Breakfast:
  • Blueberry/ Banana smoothie (1/2 cup frozen blueberries, 1 banana, 1 cup unsweetened vanilla almond breeze).
  • Glo-bar






I didn't have any thing to pack for lunch, so I had to run out. I went to Extreme Pita, and got a pita pizza with black olives, bruschetta mix, mushrooms, and mozzarella:



I also had about 4 pita chips with hummus:



After work I had to run to the university to do some work. I ate my VERY FIRST Lara bar on the way!! I tried the pecan pie flavour:



Now, I am not one to eat a lot of store bought bars ... typically because the ingredient list scares me. I always read the labels of products, and I try to find foods that have the least amount of ingredients with most, if not all of them, recognizable to me. The ingredient list on the back of this Lara Bar blew-my-mind in 1 millions ways. Check this out:



In case you can't read that ... it says "Ingredients - Dates, Pecans, Almonds."
That is insane. And amazing. LOVE it! Now that is a "whole food" bar. I am officially a fan!

It tasted great too :-)

Dinner today was Vegetarian Recipe #7 of 10.

Indian Curry with Chickpeas and Mango

This is seriously the easiest curry dish I have ever made. And it was delicious.

Ingredients:
1 - 14 oz can of chickpeas, drained
2 fresh tomatoes, chopped (or 1 - 14 oz can)
1/2 cucumber, chopped
1 large onion, chopped
1 cup coconut milk
2 T red curry paste (Patak's mild curry)
1 mango, chopped
1 T oil



Directions:
  • Heat the oil in a large, deep pan
  • Add the onions and simmer until translucent

  • Add the curry paste and simmer for 1 minute

  • Add the coconut milk and chickpeas and simmer for a couple minutes
  • Then add the cucumber and tomatoes and simmer another couple minutes

  • Add the mango and let simmer until the mango is warm


Serve over rice and enjoy!

The hubby is nagging me to come watch TV with him ... he wants to try out my new popcorn maker that I won, and I told him he was to wait for me so that he can share with me :-) I think we will make a small batch with some yummy butter!!!

Happy Sunday everyone! I hope you all had a relaxing/ homework free day like I did!

This morning started out great because the hubby offered to make pancakes! This is my portion:



With real maple syrup for dipping:



I prefer to dip my pancakes, because then they don't get soggy.

For a later morning snack I had 1/2 of this:



This was my first try of an Amazing Grass Bar ... and I found it a little too sweet for my liking. The nutritionals are amazing though, so I will be finishing the bar at some point, and eating the other few that I have.

Around 1:30 we picked up my little nephew to hang out for the afternoon. We went shopping a bit, and had a late lunch at Costco. I wasn't hungry, so I had about 1/2 piece of pizza and a few fries.

For dinner we went to the hubby's parents house. We had ribs and rice:



And salad with mixed greens, apple, cranberries, pecans, and a light dressing:



I also had a glass of crystal light icetea:



This evening the hubby and I are going to watch some of our shows. I made a little POM spritzer to enjoy.



I also had some of this homeopathic medicine today to try and help me get over my cold:



I don't know if it works, but it is worth a shot. Have you ever tried a homeopathic medicine/ remedy?

Another weekend has come and gone ... and tomorrow is Monday - sorry to remind you.
This week is sure to be crazy busy, and I still need a costume idea for Halloween!
