12 Hour Day

My eats today were rather boring ... I had a busy 12 hour work day today, and had to run out to get lunch and then ended up eating dinner at work (we were having a BBQ for the kids, and I was serving food).

For a mid-morning snack I noshed on some strawberries:


Then for lunch I ran to Extreme Pita because I needed to get away from work for a bit! I had a small whole wheat pita with grilled chicken, lettuce, tomatoes, cucumbers, banana peppers, black olives, cheese, and a little buffalo sauce:


And on the side I had some chili lime bagel chips (a small handful) with hummus to dip:




Sorry the pics are blurry - I was taking them in my car, and it wasn't working so well :-)

I ate dinner while I was serving food to the kiddies at school, so I couldn't grab a pic. I had a pretty little and pathetic looking burger with ketchup and mustard - and that is it. The only other options were chips and ice cream, and I was not going to have those!

For some reason I do not feel hungry, even after such a lame dinner ... I am going to try and have a healthy snack before bed though - maybe an orange or something.

I am having a lot of trouble thinking of healthy things to take for lunch everyday ... ideas? I like to have a warm lunch, and I am not really a sandwich kind of girl. I LOVE having leftovers, but sometimes there aren't any. Any brilliant ideas out there? I am desperate for easy/ nutritious/ warm lunch ideas!

You could take in soups to reheat, or in a flask. I get microwavable rice and you could add chicken or something. Jacket potato with a salad or any topping really. You could make a big batch of chilli and sort into portions and take that in. I take it you can heat up the food at work.

- quinoa with grilled veg (can do it the night before)

- make a batch of rice up and then you can change what you bring with it (rice and grilled veg, rice and chicken, rice and shrimp) etc...

- oatmeal! (makes for a great meal any time of the day)

- scrambled eggs with whole wheat toast

- pasta salad that you can make at the start of the week with all of your fave ingrediants

- fruit salad (not warm but still easy and nutritious)

- roasted chicken..pick up the whole roasted chickens from the grocery store and portion it out - pair it with warm veg or salad! Mashed sweet potatos etc
