Biggest Loser and Healthy "Ice cream"

I don't know how they do it, but they seem to always get the nicest people as contestants on the Biggest Loser. I LOVE this show! It is inspirational, and tugs at your heart strings. I feel SO proud of the people when the accomplish their goals on this show - they just blow my mind.

I love Coach Mo - he reminds me of Bill Cosby :-)

Anyway, on to my eats from today ...

Lunch was a pita pizza (whole wheat pita with tomatoes, onions, grilled chicken, black olives and feta): *it looks huge, but it was just a regular sized pita :-)


I have had treats in my desk at work (for the kids) since the 1st day of school (3 weeks or so now) and today was the first day I dug into them myself. I had one of these little guys:



I stayed at work pretty late, and we forgot to take the chicken out of the freezer this morning, so instead of cooking dinner the hubby and I went to our favorite veggie friendly/ fresh and healthy restaurant. I ordered the "Green Bowl" (can you tell I am on a mission to get my greens in?):



It was like heaven in a bowl. It was brown rice topped with raw cukes, sprouts, seared broccoli and green beans, tofu, and a lime peanut sauce, topped with my favorite herb - cilantro.

I savored every bite and finished almost all of it. We frequent this restaurant a lot ... now you can see why :-)

Later on in the evening I was craving something cold and refreshing. I made a healthy version of ice cream:
  • Pour a bit of almond milk into a blender (maybe 1/2 cup)
  • Dump in frozen mixed berries (until they are just above the milk)
  • BLEND like a crazy person

Wow :-)

All of your eats for the day look amazing! The pizza, the greens, and that ice cream- what a good idea! I love how it all is healthy but TASTY LOOKING! :)

Ooooh - I've been wanting ice cream, but have no ice cream maker or anything - but I DO have frozen berries and almond/soy milk! I'll have to try your rendition =D
