Baby It's HOT Outside ...

Today was a great day ... 30C/86F weather in the middle of September in Saskatchewan :-) That doesn't happen too often.

I loved my dinner last night so much that when I was leaving the restaurant I ordered a different bowl (Harvest Bowl) to-go so that I would have an easy, healthy lunch for 2 days. I had 1/2 of it for lunch today:

It was brown rice topped with squash, assorted greens, beets, and carrots - Delish!

I also had a couple slices of cheese (don't remember what kind it is because I threw the wrapper out, but it came from Costco), and a peach/apple sauce:

(I only had the 2 slices that are cut - not the whole block :-)

When I got home from work today around 5:30, dinner was READY! You've gotta love slow cookers! This morning we threw all the raw ingredients in, set it on low and walked away. Then, voila, like magic a wonderful aroma was awaiting us as we arrived home after a long work day.

Curried Chicken and Wild Rice Soup:


This is what we did:

Throw this stuff into a slow cooker:
  • Bite size pieces of boneless/ skinless chicken breast
  • 1 cup uncooked wild rice
  • 1 cup corn (I used canned)
  • 1 carrot, shredded
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 3 (14 oz) cans chicken broth
  • 2 (or more) tsp curry powder
Set it on low and walk away for 8-10 hours.

Then, add about 2 cups chicken broth, and 2 cups skim milk. Enjoy!

It was simple, and delicious. There are a lot of leftovers, so hubby is taking some for lunch tomorrow and we are freezing the rest for a cool Autumn evening.

This evening I went out for tea with a friend ... and came home feeling really hungry. I guess the soup didn't cut it tonight :-) I had 3 slices of turkey:


And a pot of lightly steamed trees:


Tomorrow is Day 2 of my C25K training schedule ... yikes.

Confession: I do not own a slow cooker. Is that really bad? They look so nifty- maybe I should invest in one!

Haha - no that's not bad. Like I said, I rarely use mine :-)
