Vegetarian Recipe #1 of 10

Whenever I go to workshops/ conferences for work, they always seem to have the same lunch - but I am totally okay with that because it is SO good! I had the same lunch as last Monday (black bean, chicken, rice enchilada, with an excellent salad).


I snacked on this bar before lunch because my stomach was growling so loud I think the people down the hall heard it:


Dinner tonight was the 1st of 10 vegetarian recipes I am going to try this month!

 Sweet Potato Burritos


1 large sweet potato (1.5 cups mashed)
1 tsp oil
1/2 white onion, sliced
2 cloves garlic, minced 
2 cups white or red kidney beans
1/2 - 2/3 cup warm water
1 T chili powder
1 tsp cumin
1.5 tsp mustard
pinch cayenne powder
1 T soy sauce
grated cheese (I usually use old cheddar) 
tortilla wraps, any colour
  
Peel, boil and mash the sweet potato.  Put the oil in a tall-sided pan and heat.  Add the onion and garlic and cook until soft.  Add the beans and mash them in the pan.  Add the water and warm.  Remove from heat and add the spices, mustard, and soy sauce.  Stir.  Mix in the sweet potato and stir.  Fill the wraps with the grated cheese and warm bean/sweet potato mixture and wrap.  Bake at 375 F for 15 minutes.  Enjoy!

* For kids (or kid-like adults) put a little extra cheese.  It is so good in there!


I was SHOCKED by how good these were! I am very impressed with this recipe. These burritos were Waaaaaaaay better than I expected them to be - they were in fact delicious! I will absolutely make these again. They are simple, healthy, and easy - oh and 100% vegetarian!

I did some work after dinner, and now I am going to watch TV and have a giant bowl of
steamed cauliflower for a snack :-)

What is your favorite thing to snack on when you watch TV? Me, I love veggies!

yum! i've done squash in mexican, but not sweet potatoes, what a great idea!

and i eat popcorn when i'm snacky-it kills my salty food cravings, and at least it's whole grain :-)

Ooh - I am so excited you are trying out new recipes. This looks delicious! J and I will have to try this one as we are now hooked on sweet potatoes - thanks to you two for introducing us to them!
