Thanks to everyone for the thoughts and prayers - they are much appreciated. Over the past week or so I have managed to try a few new recipes. One was this chicken curry soup.
Although the soup was good, it would have been better with the addition of coconut milk. I felt like it was missing something.
I also tried some buttermilk pancakes, which I will definitely make again. You can find the recipe for them here. I agree with the name of the recipe - these probably are the best buttermilk pancakes I have ever had.
The other day I made a stop at our local Korean grocery store and picked up some kimchi and gochujang. Those who know me well know that I loooooove kimchi. I even made my own once.
I was bored this evening and decided to try whipping up some kimchi fried rice. I started by frying up a few tablespoons of onion in peanut oil until it started to brown.
I then added 1/4 cup chopped kimchi and cooked for a few minutes before adding one cup of cooked rice.
I cooked this for about 4-5 minutes. Meanwhile I fried an egg. I removed the wok from the heat and stirred 1.5 T soy sauce, 1 tsp sesame oil and 1 chopped green onion into the rice. I served it with the egg on top and a few heaping teaspoons of gochujang.

this looks awesome! i have never cooked with kimchi and I love your adventurousness!! i need to try cooking with peanut oil I'm sure its wonderful!
You would make a better Korean daughter-in-law than me.....haha. I haven't even attempted to make kimchi. How did you discover your love for Korean food? I would have NEVER tried it had I not gone to Korea. In fact, I hated Korean food for the first 8 (or so) months I was in Korea.
Now I crave it....and miss paying $8 for a meal for two. SIGH ;(
I have always loved trying new foods and restaurants, so when I found out that we had a Korean restaurant in the city, I had to go. I loved it the first time I tried it and crave it like crazy pretty much all the time.
I haven't made any new recipes lately, but I am hoping to make some next weekend. I copied down some recipes from my mom's Food Network magazine, so might try one of those!
I've never had Kimchi! But I think I would like it!

I made Haitian food this weekend (which I'll hopefully blog about today). I made two dishes, Griot, a pork dish and a condiment called Picklese which some people liken to kimchi.
