Thanksgiving Monday

On Sunday we had prepped up a sausage/kale strata, so we could just throw it in the oven on Monday morning for a quick, comforting breakfast.


On Monday I did a bit of baking, including dinner buns, and a pumpkin cheesecake.


For dinner we made a pork shoulder, with scalloped potatoes and corn on the side (and the fresh dinner buns).

It was a quiet little holiday Monday at home, just the two of us (with leftovers for our short week of lunches - mmmm).

Yum, your holiday meal sounds awesome. I've never had a quiet holiday with Phil like what you had but it sounds really nice and relaxing!

It was Columbus Day here last Monday but I didn't have it off. It was quiet at work, though, as the market was closed so I got to leave a bit early which was so nice!
