Dinner at our Friends' Place

Last night we were invited to our friends' Colin and Erica's for dinner.  As soon as we walked into the backyard, I knew we'd be eating well.  Both the BBQ and the smoker were fired up, and the aromas coming from them were incredible. 

We started with the most amazing smoked salmon, and there were a couple different kinds.


We hacked and tore off hunks of salmon, caveman-style, and were in foodie heaven.  They served it with cream cheese, crackers and flat bread.


Christopher and I agreed we could have just filled up on the salmon, and would have been more than happy.  It was ridiculously good.  We only stopped eating it because Colin said we got to take the leftover salmon home - ahhhhhhyeaaaahhh!


The main course was a beer-butt chicken, which was also marinated in beer for two days:

With coleslaw and potatoes:


It was all fantastic, especially the tender, juicy chicken.

We didn't have much room left, but we were able to squeeze in grilled pineapple.


Colin definitely knows his way around the grill!

We had a really good evening visiting with these two, and taking in the beautiful evening weather.  I love dining outside.  We look forward to getting together with them again soon.

Yum, that food all looks amazing, especially the smoked salmon! We have not been grilling much this summer as Phil doesn't have a grill (yet... I want to buy one this summer) and the grilling area at my place isn't super convenient so we haven't been out there much. But I am planning to grill some shrimp skewers this week and corn on the cob! While we haven't grilled much, we do try to eat outside as much as possible!
