Last Night

Yesterday morning we were up early.  After a quick breakfast, we got to work on dinner prep; I baked a few things, including bread, pie, and cookies, and Christopher made a dip, pico de gallo, and salad dressing.


In the evening we had Steve and Mel (Christopher's brother and his brother's wife) over for dinner.


It was beautiful outside so we enjoyed the appetizers al fresco.


First was an edamame dip with rice crackers and veggies, and pico de gallo with chips.  Next we had crispy salt and pepper wings:


And then prosciutto wrapped asparagus:


The main course included char siu ribs, vegetable skewers (mushrooms, zucchini, and halloumi cheese), Asian cucumber salad, and focaccia bread with oil and vinegar.


Dessert was coconut cream pie:


And chocolate chip Oreo cookies:


It was a nice, relaxing, laid back evening, and we enjoyed visiting and laughing with two of our most favourite people. 

Today we just watched shows, sat outside, and ate leftovers.  It's been a great weekend so far, and we still have tomorrow off!

We had a busy weekend! I got together with my college friends on Friday night. Saturday night was our date night which was great. Paul hadn’t been napping well the last couple of days so I was ready for a night out! On Sunday we had Phil’s family over for a BBQ so they could meet Paul. We kept it easy and grilled brats. I made baked beans, guacamole and a corn & bean salsa and Phil’s mom brought a salad and veggie tray. We had DQ cake for dessert as it is his mom’s bday this week. It was fun to have his family over but I was so tired when they left as it was a busy weekend for us.
