I always like to celebrate Cinco de Mayo, especially when it falls on a weekend. On Sunday evening we celebrated with strawberry mango margaritas!
We also made some guacamole and, my favourite, pico de gallo.
Our main course was chicken enchiladas, and although they tasted great, the picture was horrifying. *Shudder.
It has finally warmed up and today we BBQd for the first time in a looooooong time. We enjoyed ribs, corn on the cob, quinoa salad and pasta salad. Dessert was watermelon.
It was a simple, no-effort required, thrown together at the last minute dinner - thank you Costco!
Now that the BBQ is not buried in snow, I can foresee it getting a lot of use.

Oh yum. Your cinco de Mayo meal sounds awesome (and I feel like enchiladas never seem to photograph well!). And the bbq meal looks delish! I did not eat anything mexican on cinco de Mayo and I have yet to grill yet as it's been a very rainy spring here in Charlotte. I should BBQ this weekend as I think the weather is supposed to be decent on Sunday.
Enchiladas are so damn hard to photograph nicely, seriously. I'm not really a bbq person (which might seem obvious because I don't eat meat), but every now and then my family will do up grilled veggies and I highly enjoy those. Plus, yay for better weather!
