Thursday Thoughts

- Tonight I made stuffed pasta shells (hot Italian sausage, ricotta, parsley, Parmesan, bell pepper, onion, garlic, topped with tomato sauce).  I served them with a salad (kale, spinach, radish, red onion, sprouts, tomato, bell pepper, cucumber, carrot, cilantro).  Christopher got to experience how much I love cilantro - and I held back on this salad!

- I love this girl.  I am convinced we are supposed to be BFFs.  It doesn't matter that we've never met.
- We've been watching the 1977 TV Mini-Series, Roots.  Christopher told me I had to see it, and he was right.  If you haven't seen it, I say it's a must watch.  We have one episode left - the finale, which still holds the record for 3rd highest rated US television program ever.

- I'm not a huge fan of Taylor Swift, but I sure love her newer song Trouble.  Catchy! 

- You better believe I'll be making these, these, and these.  Hopefully sooner than later.

- I'm looking forward to a low-key weekend with a mini road trip

I have not seen Roots! I don't think I've even heard of it, but I am not sure...

This weekend will be pretty low key. I am getting together with a college friend for dinner tonight, and then my boyfriend and I are getting Thai food on Sat night. And I am getting a massage on Sat afternoon which I am SO excited for!

I'm hoping to take it easy tonight, but we have a fun wine class we're going to tomorrow and then maybe having friends over for drinks. Sunday will be church, brunch and a movie!

The stuffed shells look so good. With the salad I am sure it was a great meal.

Just trying to get weekly menu going. It has been hard to get motivated this weekend!

I've never made stuffed shells before! I feel like that's a big culinary faux pas, ha ha. :) And I've never even heard of "roots" but I love getting recommends for things like that. It'll probably be a while before I have time to watch something though, ha ha. :) Where was your road trip? Hope it was fun!
