Baby it's Cold Outside

It's frigidly cold, so we spent most of the weekend cozy inside.  On Friday evening we roasted some brussels sprouts, and enjoyed those with salmon and rice.


On Saturday morning Christopher cooked up a veggie-loaded omelet, sausage, and truffle hash browns for breakfast. 


After eating, we sipped coffee in the kitchen while I made bagels


It's a bit of a process, as they need to rise three times, are boiled for 30 seconds per side, and then baked ... but they're so worth the time spent.


The first time I made bagels, I tried onion as the topping.  This time I made sesame seed and plain bagels.


Last night we went out for dinner to celebrate a friend's birthday


After sleeping in a bit this morning, we dug into the bagels.


We topped them with cream cheese, paper-thin sliced red onion, and smoked salmon.


This was a fabulous breakfast!  We already drank a pot of coffee, but Christopher just whipped up afternoon lattes to curl up on the couch with.  It's going to be a snugly day.

Yum, those bagels look amazing. I just read a book called "make the bread, buy the butter" which talks about what is worth making and what you should just buy. Bagels was one thing she said you should go to the trouble of making as they are sooo good homemade. My gluten free heart aches to eat one of your bagels!

Sunday was a more low key day for me, which is what I needed after a busy week. We went to a holiday brunch hosted by a friend in the morning. It was great to see so many friends and share our exciting news in person! I spent the rest of the day relaxing, finished my MIL-to-be's scarf and got caught up on things like wrapping presents!
