Haha, kidding. Sort of.
We did make beef stew with dumplings.
Soft, billowy, luscious dumplings, made with shortening and love.
It's been absolutely freezing all week, so this was a perfect dinner to warm us up. On Sunday we had made a stock from chicken and turkey bones, with all sorts of warming spices, and the chicken soup we made from that was great for dinner one night, and our lunches for the start of the week.
This evening we roasted a spaghetti squash, and topped it with meatballs and a tomato sauce.
I had messy breakfast bowls each morning this week.
Latte oatmeal with melon:
Plain Greek yogurt with peanut butter, melon, and granola:
Yogurt with pomegranate and granola:
We're looking forward to a fun weekend at home and around town.
How was your week? What are you up to this weekend?

It's bitterly cold here, too, so I do not want to leave the house! Last week was a total blur as I got back from Spain on Sunday, had my Minneapolis holiday party on Tuesday night and then flew to Chicago on Wed for work, came back on Friday, and got engaged that night! And now I'm flying to Chicago AGAIN today! I'm so tired and ready for a period of hibernation. My goal is to not plan much the week after Christmas so we can have some low key time at home together!
