White Chocolate Macadamia Nut Cookies

Yesterday afternoon I baked some cookies.


I am not big on desserts, but I am a sucker for homemade cookies.


White Chocolate Macadamia Nut Cookies

1 cup salted butter, softened
3/4 cup sugar
1 cup packed brown sugar
2 tsp vanilla
2 lg eggs
3 cups flour
3/4 tsp salt
1 tsp baking soda
1 cup macadamia nuts, coarsely chopped
1 bag white chocolate chips (12 oz)

Preheat the oven to 350 F and line baking sheets with parchment paper.
Beat butter with sugars.
Add vanilla and eggs, and beat for a couple of minutes.
Stir in flour, salt and baking soda until just combined.
Add chips and nuts and give it a few stirs.
Roll golf ball sized balls, and space out on sheets.
Bake 9-10 minutes, then remove and let cool for a few minutes before transferring to wire racks.

Yum, those look so good! I can't remember the last time I made cookies, it's probably since before I found out about my gluten intolerance. But before I knew about that, my favorite cookie was the gingerbread men/women my mom makes at Christmas. Yum, I miss them! Runner up is chocolate chip.

These sound/look delicious!This is one of my favorite types of cookie! Can't wait to try it!
