Puffed Wheat Cake

I have done a lot of baking in my life.  I have also lived in Saskatchewan my whole life.  Considering these two facts, it's quite bizarre that have never made puffed wheat cake until now.



Anyone who has grown up in Saskatchewan has had puffed wheat cake (or squares as non-Saskatchewanian's might say).  When I was a child, I don't think there was a day that this dessert was not in my house.  My mom always had puffed wheat cake, rice crispy cake, chocolate chip cookies and cinnamon buns on hand ... at. all. times. 



For some strange reason, I did not make puffed wheat cake until yesterday.  Everyone thinks they have the best recipe for this, but they don't.  My mom doesHer recipe is below:



Puffed Wheat Cake

3/4 cup corn syrup
2/3 cup margerine
1 1/4 cup light brown sugar
6 T cocoa
1 tsp vanilla
12 cups puffed wheat

Bring all but puffed wheat to a boil.  Boil 3 min..  Pour over puffed wheat and stir well.  Press into 9x13 pan with waxed or parchment paper.  Let cool, then cut into squares.

Ha, I have never heard of it! We had rice krispie treats occasionally when I was growing up but my mom's favorite thing to make was homemade chocolate chip cookies. Which I miss so much as they were the best.

I guess I would normally say puffed wheat cake. Love it - but only when people don't overcook it. I'm not into super-chewy puffed wheat - I like it soft and gooey :) My mom sometimes made it, and I've only ever made it once.
