Midweek Musings

On Monday evening I came home from work and Christopher had a roast chicken all ready to go into the oven - mmmm!  Not much smells better than a chicken roasting.


He made roasted potatoes and corn with it; and we also ate some of the carrots and celery that were in the pan with the chicken.


The leftover chicken made great sandwiches for a quick and easy dinner last night.  After dinner I snacked a bit at a little gathering for my friend Jessie who is having a baby very soon ...


My friend Jocelyn put together a great spread of goodies!!  It was a lot for six ladies, so she made sure to send me home with a plate for the boy ;-)

Tonight we're headed out on the town!

Wow, that is quite the spread - especially for 6 people! I have a hard time finding really good appy recipes that aren't ridiculously time consuming.

My week has been pretty uneventful. It's the first week I haven't traveled this month so it feels weird to be in the office 5 days. I am definitely ready to get out of Charlotte again and am counting down the days until my Paris trip on Tuesday!!
