Shrimp Bee Bim Bop

There has been something very important missing from the Everyday Foodie fridge the past month or so.  It was missing the best, stinkiest, tastiest food that usually takes up residence in there.

We were out of kimchi!!!! 

The only good thing about the statement above is that someone must have eaten the two liters that were in there, and eating kimchi is never a bad thing.

Today I made the necessary, and long overdue stop at the Korean grocery store to pick up some more of my precious.  We then got to work making the very strange sounding, yet easy, and incredibly delicious, bee bim bop.  If you are too scared to try bee bim bop - don't be.  Go to a Korean restaurant, and order it in a hot stone pot.  There is nothing weird about rice, veggies, a bit of meat and an egg.  

Shrimp Bee Bim Bop


Ingredients:

*Measurements/amounts aren't important

- white (sticky) rice
- assorted veggies (julienne) (we used celery, carrot, cucumber, mushroom)
- thawed cooked shrimp
- gochujang (red pepper paste - it comes in that little red tub in the picture below) 
- eggs (one per person)

Optional but very delicious (in other words ... buy them):

- kimchi
- seaweed
- raw green onions

Cook the rice however you like to cook rice (but please tell me it's not in the microwave).  Meanwhile, stir-fry the veggies in sesame oil or other.  Sprinkle with some sugar to sweeten them up a bit.  Remove once softened and set on a plate.  Toss some thawed/cooked shrimp into the wok and stir fry until hot.  Remove shrimp and set aside.  Fry up one egg per person.

 

Assemble the bowl however you like, but stir in that gochujang (there is never enough), and toss the fried egg on top.  I like top my bowl with obscene amounts of kimchi, seaweed and raw green onions.  

To-die-for.

Well, you eat more kimchi than any of my friends...so you're in the clear. Just don't pull that stunt again!

I actually don't think I've EVER had kim chi in my fridge which is making me so sad! I need to get some ASAP.

I have not tried this, but would love to! I want to start by trying it in a restaurant before making it at home, though, so I know what to expect. Sounds delish!!

No kimchi??! Ha ha, blasphemous. I can't wait to pick some up on Saturday! And bibimbap is so damn good, I love gochujang paste. So spicy and sesame-y and flavorful. Today I made a curry with random farmer's market veggies and rice. Sounds boring, maybe, but it was crazy good - especially with sriracha and avocado!

Running out of kimchi is scandalous in my home. You should have been born Korean, dear Jolene, and have a mother who fresh-makes pots of kimchi every month. ;-)

I've never tried it traditionally, but I've made my own! Loved it and totally forgot about it, thanks for the reminder!
Only a few more weeks (until baby is here) and I can eat runny egg yolk - drools......... 8 + months is long enough, I miss them terribly!
