Lobster Alfredo

Last night we were in a pasta mood.  We made lobster Alfredo.  Mmmmm!  I am glad there are leftovers in the fridge.

Lobster Alfredo

- Cook pasta according to directions (we used about half a box of fettuccine, and didn't need all the sauce).  The sauce recipe below would likely make enough for a box of pasta.
- Boil 2 lobster tails for approximately 10 minutes, then remove from water, crack open, and chop of the lobster meat finely
- Meanwhile, make the sauce

Alfredo Sauce

1.5 cups cream
1.5 cups milk (I used skim, but any would do)
1 cup shredded cheese (Parmesan & Romano or Asiago)
6 egg yolks
salt, pepper and parsley

Heat the milk and cream in a small pot until simmering.  Meanwhile, put the egg yolks in a bowl and set aside.  Remove milk/cream from heat and stir in the cheese until melted.  Ladle a scoop of the milk mixture into the egg yolks and whisk.  Pour egg yolk mixture into the put and put back on the heat.  Warm until thickened and desired temperature.  Season with salt and pepper, and throw some parsley in for colour.

Pour sauce over the cooked pasta and top with the lobster.  Enjoy!

This recipe was not too rich - just perfect.

How was your weekend?  Did you cook anything new this weekend?

Yum, that sounds really amazing. I have actually never made Alfredo. I used to eat it all the time as a kid, but now that I have cut back on dairy, I haven't had it! I might have to try making that for my boyfriend one of these nights!

I did not try any new recipes, but I made 2 soup recipes - a taco soup/chili last night and right now I have potato soup cooking in my crockpot. :)

Sounds likes a perfect weekend night dish. I LOVE lobster! I need to scour the stores for sales in the coming weeks so I can make this.

We made a new shepherd's pie recipe last night. It was a lot of work and just turned out OK. Kind of disappointing.

My weekend was great! We bought the little guy a wagon and finally set it up over the weekend. He loved it!! P.S. You make the most amazing looking food!

Am pretty impressed with all the seafood I've seen on your blog lately. It all looks so good, but it's something I'm not good at cooking (and don't really know where to buy, either - I'm thinking Extra Foods is NOT the way to go).

Drove up to the Grand Canyon Friday night (it was dark), but caught sunrise while standing canyonside Saturday morning. Had huevos rancheros for brunch, did a little touring around, then visited a safari park later that day before heading back to my parents' house. Just relaxed yesterday and packed up. Flew back to S'toon today. So glad it wasn't too cold when I got home!
