Maple Cinnamon Raisin VOO Parfait & Spiced Quinoa


Maple Cinnamon Raisin Overnight Oat Parfait

- 1/3 cup quick oats
- 1 scoop chia seeds
- 2/3 cup unsweetened vanilla Almond Breeze
- 1 tsp real maple syrup
- 2 tsp golden raisins
- A few good sprinkles of cinnamon
 
Mix together and put refrigerate overnight.  In the morning make banana soft serve (1 frozen banana, 3-5 T Almond Breeze) and layer with the oats.


This was one of the best breakfasts I have had in a while. It is a keeper fo sho.

Tuesday's Eats:

Breakfast: 2 eggs, 1 slice toast


Lunch: 2 leftover pork crepes, a peach, 1/2 red pepper, 1/4 cucumber

Snacks: cheese string, an orange, a chocolate truffle

Dinner: Chicken noodle soup, with ketchup & pepper stirred in because it makes it so good.

My breakfast this morning was the oat parfait above.  Lunch was a couple more leftover crepes, red pepper and cukes, and an iced cappuccino.  I made a quinoa dish for dinner:


Spiced Quinoa
(serves 2)

- 3/4 cup quinoa (rinse well)
- 1 cup chicken broth
- 1/2 light coconut milk
- 1/2 tsp cinnamon
- 1 1/2 tsp curry
- 1/2 tsp cumin
- salt and pepper to taste
- 1/4 chopped cucumber
- 1 chopped tomato
- 1 cup chickpeas

Mix the first 7 ingredients in a pot, and bring to a boil.  Once boiled, remove from heat and simmer on LOW on another burner for 17-20 minutes covered.  Toss in cukes, tomato, and chickpeas, and stir to warm.

I love quinoa but I never make anything special with it. I have subbed it for barley in tabbouli before and it was great!

Haha- your apple a day comment cracked me up. I am slowly building back up to more apples :)

you put ketchup in soup??? I'll have to try that out! I put ketchup on all sorts of weird stuff. My favorite being cottage cheese, it's a great combo.

I love quinoa!! I like to add a mexican flair to it by adding black beans, tomatoes, corn and cilantro topped with avocado. Yum yum. I also like it for breakfast in place of my oats, or I have made a granola out of it too!! Obviously the ideas are endless ;)

I rarely use quinoa unconventionally, but I think I need to start! I've seen people use it to make granola

i dont use quinoa too much, i just don't "reach" for it..but I really need to start incorporating it more!

and the comment to me about unschooling and that you were chatting w/ your teacher friends and that based on the 1:1 rather than 30:1 ration, that that alone can make it totally work..indeed! as well as love, time, energy and attention that a parent has for their pride and joy to to whatever it takes to help them succeed :)

Haven't tried quinoa yet but some day as I see it everywhere. Oh and believe it I won...the cheque was beautiful :-)

Quinoa is great on its own, or mixed into stir fries.

I have never heard of someone putting ketchup in their soup! Very interesting! But it does make sense!

My fave quinoa dish is this quinoa pilaf I made last summer. It's sort of a time intensive one as you have to finely chop a bunch of vegetables, but it's delish.
