Potato, Onion and Gruyere Galette

I am not a big fan of cereal, but yesterday I was totally craving a bowl of corn pops - hehe!!  I don't remember how long it has been (years) since I had them before this.  They were pretty good :-)


Lunch was some cauliflower KD, 2 clementines, and yogurt with berries.  

Dinner was crusted cod fish, with a potato, onion, and gruyere galette:


Potato, Onion and Gruyere Galette

1 T butter
1 tsp thyme
1 yellow onion, sliced
2 large white potatoes, peeled and thinly sliced
2 T olive oil
3/4 cup gruyere cheese
sea salt and cracked black pepper

Preheat oven to 400F.  Melt the butter in a 24cm ovenproof frying pan.  Add the onion and thyme and cook 5 minutes.  Plate all other ingredients in a bowl and toss together.  Top the onion with the potato mixture, and bake for 45 minutes - 60 minutes.  Turn out to serve.  Serves 4.


Dessert was fresh fruit.


This morning I had a VOO parfait for breakfast.


VOO
- 1/4 cup quick oats
- 1/2 cup unsweetened vanilla Almond Breeze
- 1 tsp cinnamon
- 1 scoop chia seeds

Mix together and refrigerate overnight.  In the morning make banana soft serve (1 frozen banana, and 1/4 cup Almond Breeze - food processed or Vita Mixed until soft serve consistency).

I LOVE cereal, but to be honest I love them ALL lol. My daddy loves mini wheats (frosted of course) so I tend to have a special love for those. But to be honest, I could eat cereal for every meal, as long as I got to change which kind every meal ;)

I ate cereal for breakkie every single day when I was little and my favorite was Apple Cinnamon Cheerios. I haven't had them in forever, but now I'm thinking I might just have to buy a box!

I used to eat cereal all the time but now we don't buy it so I never eat it! I used to LOVE Lucky Charms though :-)

I don't eat much cereal because it doesn't really seem to 'fill me up'. My favorite before I found out about my gluten intolerance was Cracklin Oat Bran. My fave now is Cinnamon Rice Chex. My fave cereal from my chidhood is Trix!

I can usually take or leave cereal but my brother - we used to call him the "cereal killer" because he ate so much cereal all the time. I eat it a couple times a month and it is always original Cheerios. They are the best!
