We cooked up a new favourite on Thursday evening, rosemary polenta with eggplant.
It's so good topped with a smoked cheddar or gouda (or blue cheese), and then broiled.
Christopher's band was playing last night. Before heading out to the show, we roasted a spaghetti squash, and had that with salmon and Greek salad.
We seasoned the spaghetti squash with salt and a lot of pepper, then grated sovrano cheese over it, and drizzled it with truffle oil. My how-to for cooking a spaghetti squash can be found here.
We were up bright and early this morning, as usual, and cooked up a big breakfast. We made fluffy buttermilk pancakes, sausage, and scrambled eggs.
Lattes and pink-grapefruit juice to drink, and we were set for the day.
Tonight, we're firing up the BBQ - It's gorgeous outside!

I can't wait to get a grill so we can do some grilling at Phil's! The weather has been beautiful here so we did some yard work and I went for a long walk on Saturday morning. Other than that I've done some packing and moved quite a few things over to Phil's. It's nice to be able to gradually move over there!
