To make haystacks, you just pile everything you'd put into a taco, over cooked rice. We topped our rice with grated cheese, ground beef cooked up with taco seasoning, tomatoes, olives, salsa, sour cream, cilantro, and crunched up tortilla chips.
It's so easy and versatile, and is great for leftovers. I put everything into one container, except the tortilla chips I put into a little baggy, and the salsa and sour cream I put in a a separate container to add after warming.
On Monday evening we had homemade perogies and cabbage rolls.
Then on Tuesday evening we took my dad out for supper to Swiss Chalet. I got my usual, quarter chicken dinner; I really love this place out of nostalgia. My parents always took us to Swiss Chalet as kids.
We had a nice time catching up with my dad.
This week is going really well so far; we're slowly getting our yard cleaned up and ready for summer. It's gorgeous outside!

Those haystacks looks so good - I need to make something like that! I love tacos so those look awesome.
This week has felt busy as it's a short week since we head to San Francisco today (!!!) and I found out I need hip surgery yesterday so I have been scurrying to book things that need to be booked before surgery - like doctor appointments, a CT scan, and my move! I feel a little panicky about getting everything done but am going to try to not think or worry about it during our SF trip!
Since I haven't been around much this week, we've been having leftovers. I made picadillo over the weekend so I've been enjoying that with sweet potatoes for breakfasts and dinner, which is really yummy!
Those haystacks look relish. We usually are lazy use a kit and do a mix of hard and soft tacos :) I do prefer to make my own seasoning, but sometimes convenience trumps taste.
Love perigees and cabbage rolls! Have only made cabbage rolls from scratch once, and I can't say they turned out that well. I prefer to eat what others have created :)
