Best Sugar Cookies

I had a laid back, relaxing weekend.  I am absolutely loving being done classes, and just doing work on my thesis.  It is far less demanding of my time and energy and I am free to spend much more of my time doing what I want to do.  This weekend included dinner with friends, a road trip to visit my mom, and lounging around the house.  

Eats have been great over the last few days.  These were the highlights ...

 

Mmmmm, gotta love extra crispy bacon, perfectly cooked in the oven.  No mess bacon that snaps right in half - just how I like it!

This evening I baked a bunch of cookies for my students' valentines treat bags.  They will dry overnight and I will bag them tomorrow.

I think that these are the best sugar cookies ever!

Best Sugar Cookies

- 1 cup sugar
- 3/4 cup butter
- 2 eggs
- 1/2 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp salt
- 2.5 cups flour

Cream the butter and sugar.  Add eggs and vanilla and mix well.  Add the dry ingredients and mix.  Cover dough and refrigerate for an hour (or more).  Roll about 1/4 inch thick or a little more, cut, and bake for 6-8 minutes at 400.

These cookies are soft and delicious and by far the best sugar cookies I have ever had.  I decorated them with royal icing (5 T meringue powder, 1 tsp cream of tarter, 3/4 cup warm water, 5 cups icing sugar) that I coloured with pink paste colour.  I added water to thin the icing out for flooding.

 

I am looking forward to this week because it is my last week before holidays!

I use my grandma's recipe for sugar cookies and this looks very similar. I bet they're great!

Cute V-Day cookies! When I was little I went to a primary school that had less than 120 kids... my Mom baked cookies that looked exactly like yours - one for every kid in the school. And people wonder why I love to bake, haha! Happy Heart Day!!

Aw, that was sweet of you to make cookies for your students! I did not make any Valentine's Day treats... But i bought some girl scout cookies (which I can't eat because of my gluten intolerance) and told my co-workers to eat them, so I guess that is my sort-of valentine's day treat for the week!

I'm not really making any "treats" but I have added a few more fruits to my lunches for everyone to share than normal - and I'm making them all heart themed. I would say that overall my weekend has been pretty good. ^^ Happy Valentine's day!

Happy Valentine's Day! I had eggs on toast the other day too ... but wished I had some bacon, like you! I haven't tried making bacon in the oven but it has to be easier (and less messy) than the stove.

You're such a nice teacher, I didn't give my students any valentine's day treats. I just demanded they practice piano more, mua ha ha! :P
