Italian Sausage, Yam and Kale Soup

I had a very strange dinner tonight.  I didn't feel up to cooking so I had cucumbers with hummus, fresh peas, and toast.

 

I think "strange" was my theme today because I had something a little different for breakfast too ... savoury oats!  


I made them with chicken broth and topped them with an egg, Parmesan cheese, and Pico de Gallo.  This is my first time trying savoury oats, and they were pretty good.  Think brown rice with toppings ... but creamier.  I think I prefer them a little sweeter in the morning though.

Last nights dinner wasn't strange ... it was just plain awesome!  I made a easy soup with Italian sausage, yam and kale.


Italian Sausage, Yam and Kale Soup

3 Italian sausages (removed from casings)
1 onion, chopped
4 cloves of garlic, minced
1/2 cup white wine
5 cups veggie/chicken broth
1/2 bunch kale, chopped
1 carrot, chopped
1 large yam, chopped
1 inch chunk of ginger
1 tsp red pepper flakes
1 cup cream
1 T dill (I used freeze dried)
1 T parsley (I used freeze dried)
Salt and Pepper to taste

Crumble sausage into a dutch oven (or other lg pot) and cook on medium until done.  Set aside.  Add onions and garlic and cook until starting to brown (add some oil if needed).  Add the wine to de-glaze.  Add the broth and bring to a boil.  Add the kale, carrot, yam and chunk of ginger and red pepper flakes.  Simmer until veggies are very tender.  Remove chunk of ginger and discard.  Add the cream, cooked sausage, dill, parsley, salt and pepper and simmer for a couple minutes.  Enjoy!

I am TOTALLY afraid of savoury oats! I like mine on the sweet side, too, so I rarely eat them without some sort of fruit mixed in.

Haven't been eating "outside of the box" lately. Stress is causing me some tummy troubles, so I've been keeping things pretty bland.

I had peas for dinner one night and then some strawberries. That was an odd meal, but I had nothing in my fridge as I had just gotten back from a business trip and I didn't want to spend money on take out.

That soup looks delicious!

I ate turtle soup last week. I didn't really think there was turtle in it, but turns out I was wrong.

Is this a strange dinner? I eat things like veggies & hummus, toast and smoothies for dinner every time the Mr isn't around for dinner. I call it 'girl food' and I love to indulge. Because I regularly cook 'boy food.' ;)

I haven't eaten anything strange...although eating out a lot, which I did while I was away this past weekend...was strange. I haven't ever tried savory oats...I'm too scared they will be a gross texture.
