Breakfast was pretty typical for me ...
Lunch was leftover butternut squash curry and jasmine rice (from yesterday) with an orange.
I snacked on this muffin, and some crackers with guacamole.
All pretty typical ...
But dinner!!!!! Ohhhhhhh dinner!!!! It was goooooooooood.
Angela can always be trusted for incredible recipes. I have made more of her recipes than any other blogger, and I have never been disappointed.
I will definitely be making this vegan Alfredo pasta dish again, even after vegan-week is over. It was incredibly easy, and the sauce was so good that the hubby used his slice of (vegan) toast to sop up the extra.
* There is NO "fake" cheese in this recipe, yet it still has a creamy, cheesy taste.
Have you ever been pleasantly surprised by a "different" recipe?

I have to say that my squash muffins were different but pretty good if I do say so myself.
The vegan pasta looks amazing! I'm going to check out the recipe! I've been suprised by different recipes....I think the recipe for black bean brownies takes the cake! They are so good!
Yelena - Mine is gluten-free too!! I used rice pasta. I couldn't tell the difference at all, except when it was cooking.
