Vegan Day 2 and Some Lovin'

Why being a vegan (at least for a week) is not too difficult (so far):

1) You can still eat chocolate 
(just make sure it is semi-sweet or dark - nearly all of these are dairy free)

2) You can still eat ice-cream ... 
(the stuff made with coconut milk takes just like regular ice-cream, and it is soy free)  
(So Delicious makes many different flavours, including ice-cream sandwiches and other treats)

3) Eggs can be replaced in baking
(1 T of chia seeds with 3 T water)

4) Ezekial bread is vegan ... and it rocks!  
(This was my favourite bread even before this challenge)

5) I didn't drink milk anyway
(I use Almond Breeze in my smoothies) 

Breakfast this morning was 2 slices of cinnamon raisin toast (Ezekial bread) with Earth Balance (vegan "butter"), and a smoothie made with Almond Breeze, peaches, strawberries and pineapple.


Lunch was leftover soup (see yesterdays post) and strawberries.

Later in the afternoon I ate a Lara Bar.


The hubby made dinner this evening while I was at a basketball game with my team.  
He made a butternut squash curry with jasmine rice.


My snack was an apple with melted Cocoa Bliss (vegan chocolate coconut spread).


 I am Loving

I am loving how the days are getting longer, the sun is shining, and puddles are forming.  Spring is on it's way, and I feel totally rejuvenated. It is so nice to drive to work in the daylight, and come home again in daylight. 

I am loving how I am having an easy semester.  
I only took one class, and it is a nice break from the workload I usually take on.

I am loving my hubby, the beautiful flowers he got me yesterday, and the gift certificate for the best chocolates in the world that he gave me for after vegan week is over.

I am loving Eminem's Recovery album.  
Don't judge.

Also loving the longer days and warmer weather as of late. And who doesn't love Eminem?!? February break next week is also high up on my list of things I'm loving.

Aww such a good hubby!

I think I could probably be a vegan. Except I lovvve yogurt.
I need to try that Ezekial bread. I've heard so many good things!

Sounds like going vegan isnt very hard for you!! No worries...I love eminem's stuff too. Hes just amazing :)

I am loving that spring is sneaking up on me too! The past few times I've gone running outside, I've found that I've totally overdressed. No more 18 layer outfits for this girl, haha.

I'm enjoying following your vegan adventure, I could never do it (tofu and I don't see eye to eye). The strawberries in chocolate seem very doable however!
