Relaxing

T

his weekend has been very relaxing so far, and I am enjoying every minute of it.

Last night we went out for a Korean dinner with some friends.  I got the Bee Bim Bop and a side of Kim Chi, that I proceeded to dump into my dinner.  I could live on Kim Chi.

After dinner we went to a script reading at a small venue in the city, and then came home and fell asleep around 10 p.m. :-)
Today I spent the day running wedding related errands with my sister.
I fueled up with eggs and toast in the morning, and then we went out for a Thai lunch.

We shared some lettuce wraps, and then the green chicken curry, and some delicious rice.  There was enough for my sister and I to both have lunch, and then for the hubby and I to have the leftovers for dinner.

We have no plans yet for this evening ...

It feels kinda nice.

What are you up to this weekend?
What is your favourite Thai dish?

Favorite Thai dish - so hard to pick one! I love green curry, red curry, and those spicy, garlicy wide noodles - usually come with tomatoes and basil but different places call the dish by different names.
Hope you have a nice weekend :)

That's awesome about you and your husband trying the vegan thing together! I'd love to do that with Steve sometime... he's surprisingly open to it too. I'd love to hear what you guys thought of it when it's all over!

I can happily live on kim chee too!

I love thai food, especially spring rolls. The basil and mint together make my heart happy.

I'm not sure if 10pm is early for you but I'm typically in bed at that time :)

Sounds cliche but I really like Pad Thai Noodles with shrimp. :)

I LOVE Thai food. There was a place I used to go to all the time in Phoenix that made a pumpkin basil curry that knocked my socks off every time.

in my old neighborhood there was a thai place that had a curry called "evil jungle prince". I HAD to get it every time.
(and it was delicious. but the name was the best part)

My favorite is Tofu Pad Thai, or that coconut soup but I can't remember it's name.

I to say that I have never tried any of the eats that you have had this weekend. I am also SO very jealous of your relaxing weekend.

My entire weekend was spent doing my group proposal paper and presentation!!
