Colour

J


have read that the best way to ensure proper nutrition, is to eat as much colour as possible, and mostly plants.

My snack last night fits with this advice.



This morning I was up bright and early for a conference. I chugged a Green Monster before I left (3 cups spinach, 1 cup Almond Breeze, 1 T almond butter, 1 pack Amazing Grass, 1 scoop Power Twister).

I had about 3/4 of this breakfast at the conference:



Along with 150 cups of coffee.

Mid-morning I had a cookie that didn't want its picture taken.

The lunch they served at the hotel was pretty good. I had some lentil soup, a wrap, some veggies, and a mini peanut butter marshmallow dessert:





In the late afternoon I snacked on half of this bar (thanks to Jessica for sending me this!):



The hubby and I went for dinner to one of our favourite places, 13th Avenue Coffee House. It has a full menu, and all the options are fresh, healthy and delicious. I had the Jivin Jerk Bowl which had tempeh, brown rice, veggies, and a tangy jerk sauce. It also had a couple plantain chips sticking out of it :-)









No big plans for me this Friday night ... just a quiet evening in.

My snack tonight was a grapefruit, and some crackers with goat cheese:

Its one of the reasons I love being a vegetarian: to cram in enough fresh vegetables into my diet, and with colours like that - you can see the appeal.

Wow looks like a full friday! I have been trying to incorporate more color as well. There are so many nutrients that I dont get! My sister comes in today, so Im planning on meeting up with her and her son today and then tomorrow we are going to church and having a big family dinner. :)

Love the Jivin' Jerk Bowl and the sounds of that peanut butter marshmallow dessert. Peanut butter and marshmallow fluff sandwiches are my favorite food on the planet so this would surely make my day!

I plan on relaxing the rest of the weekend. At least most of the time. I do need to get some cleaning and laundry done! But I'm going to enjoy the downtime, especially since I ran my 10k this morning. Taking a much needed breather after a 60 hour work week and 10k.

Conferences mean tons of coffee. I love brown rice and.plantain chips! Sounds like your little town has a pretty good variety of restaurants! Even Korean and Thai! Mine doesn't :(

I hope you enjoy your relaxing evening! I'm gonna be busy for the next week - I'm finally on spring break (YAY!) so I'm trying to catch up on all the stuff I have to do, so that I can spend the second week of the holidays totally chilled out. I'm looking forward to that week already!

I have heard that as well. The more color the more concentrated the vitamins and minerals!
