Coconut

I


think I have a problem. I am obsessed with coconut. I love it. I can't get enough. If something has coconut in it, get it IN my belly.

Last night I had So Delicious Coconut Milk "Ice cream" - my new love.

How 'bout you - What is your latest foodie find?

Breakfast this morning was LOADED oatmeal.

I topped my oats with 1 T coconut, 1 scoop chia seeds, 1 T almond butter, 1/4 cup granola, and 1 t maple flakes.



Lunch was some noodles with spaghetti sauce, Coconut Greek yogurt, and an orange.







After a long day at work I had a few organic chips with guacamole to hold me over until dinner.



Do you have an after school or after work snack?

Dinner was BBQ beef (done in the slow cooker) from the cook book The BIG Cook, with roasted potatoes and parsnips:



After dinner I went to work for 2 hours. It is report card time :-(

My snack this evening was a very purple smoothie with 1 cup almond breeze, 1/2 frozen banana, 1/2 cup mixed berries, 2 packs of berry Amazing Grass.

Hmmm coconut is good.

I have been DYING to try that Dark Choc PB Dreams but if it's anything like Nutella it might be a BAD idea for me to buy it!

you and me both girl! i am OBSESSSED with coconut, though i can't say i've been as lucky as you have with coconutty eats lately! i need to have more! my fave coconut food isjust shredded dried coconut, bc you can add it to anything (or eat it plain lol)

Wow..I am also nuts over coconut..loves just about anything with coconut or coconut milk in it. But this one dessert takes the prize for me...Check it out, you will love it.

I love coconut! I especially love a coconut smoothie made with coconut water. In the summer months is the perfect post run treat.

I LOVEE coconut anything. Especially in the form of sauces in Thai food..DROOL. So bad but soo creamy good. I still need to get that icecream!

I used to have after school snacks when I was younger. Now I keep a bar with me in case I get hungry before I get home from work.

Coconut is heaven to me. Every chance I get I try to put it into anything I am baking. I must find that ice cream you are enjoying! Goodness it looks amazing!
I usually don't have an after work snack because I run right after work. My after workout snack though is usually either nonfat plain yogurt with granola and honey or a protein smoothie :)

I love all things coconut. I use the So Delicious Vanilla Coconut Milk for my smoothies and the ice cream is to die for.

I am so glad that coconut is taking over the foodie world.

Where did you end up finding the peanut butter & co stuff??

I just saw a recipe on Heather loves Almond Butter... she took shredded coconut and buzzed it in the food processor until it turned into coconut butter!! It looked amazing!

I am just cuckoo for coconut! I put coconut oil in just about everything! I love the way it smells and tastes. And So Delicious coconut milk ice cream is divine! The Turtle Trails flavor is so good, I have to stop myself from eating the whole container.

I just got the dark chocolate dreams this weekend too...it was heaven. I paired it with some cut up strawberriend and banana for desert. I also tried coconut butter for the first time...it was also heaven on oats!

I almost bought coconut ice cream, but I knew it would be too hard to not eat the whole container!

Right now I'm loving chia seeds, gouda cheese, pink lady apples, and frozen pom arils.

Coconut bubble tea is amazing - but too many WW points so can't have that anymore...pout. On the up side I did find an awesome WW recipe for green curry fish that uses light coconut milk. Made it last week and hubby and I both loved it! I used basa instead of snapper though... Only 7 points and that includes rice! I've never been too much of a fan of coconut, but I do like it in the dried form...not really in milk form though!
By the way, I think you will LOVE kaya!! Kaya = coconut jam. SO good!

Mmmm I looove coconut! I love to eat it in baked goods best- Congo bars (with white chocolate,pecans, and coconut), coconut custard pie, and almond joy candy bars.
I always eat an afternoon snack. I'm ravenous at 4pm!!

I found a store in my city that sells those flavoured peanut butters. I loathe peanut butter but I love all other nut butters! They should make white chocolate almond butter. :D

My latest find was this goat cheese that had a cranberry coating. It is SO good in salads!! I love trying new things.
