1st Day of Spring

ust like that ...

The
first day of Spring, and what a beautiful day it was!

I woke up quite early and made this lovely breakfast:





A giant pancake wrapped around a banana and tsp of almond butter.
I drizzled some syrup on top.

The hubby and I spent the morning cleaning house, and then I went for lunch with my dad. I had a veggie quesadilla with sweet potato fries.



This afternoon I started training for my 5k! I had started the C25k program way back in the fall, and only made it to week 2 before it got too cold to run outside. Today was my first day running since then.

I started on week 3. It was tough!! (Sad but true). I have a lot of work to do before the 5k. I did 3.5 K today (walk/run intervals).

For dinner this evening the hubby and I, and a friend of ours went to The Little Belizean Cook Shack. I love this restaurant because the owner takes your order, and then goes in the back and cooks the authentic, home cooked style Belizean food. No hydrogenated fats are used, and no added salt. I believe that the food is all wheat free as well.

I had 1 1/2 veggie samosas:



And then the vegetarian roti stuffed with tomato, and a vegetable reminiscent of Swiss chard, with a side of coleslaw.



This evening we went to "The Blindside" with some friends. What a fantastic movie!

Vivacious vegan here! Just wanted to pop over and let you know I love your blog and your food pics. are to die for! I am seriously thinking about stealing your idea of wrapping a banana in a huge pancake for my blog too!!! So yummy looking!

That breakfast looks fantastic. Congrats on starting the program! Im struggling with training as well...just gotta stick to it! I want to see Blind Side soooo bad. I am such a football fan, plus I love true stories. I know its going to be great!

You'll do great in the 5k.. it takes a while to get endurance with running, but for me, once I hit a certain point in my training it's all easy peasy from there.

We rented The Proposal last evening....at first we didn't care for it, but it did get a lot better and we liked it then..he he! Good to know about The Blindside!

I have seen "The Blindside". It was actually based on the guy where I grew up going to school. In the movie they call it a completely different name but it's Briarcrest Christian School. It's so great knowing there were people in my hometown that were that selfless and loving. You'll love the movie!!

I slept through the first day of spring. I use to sell diced potatoes to a place that made samosas by the thousands it seemed. Loved both the veggie and beef samosas.

Oh, I didn't realise that the 21st was the first day of Spring. Oops!
I haven't seen The Blind Side, but I will be seeing it sometime this week, I hope. All I've heard about it is good so I have high hopes.

Mmm that looks good! I'm actually having pancakes for diner tonight, and think I may add a bit of PB ;)
