It smelled so good back there, as the smoker was going when we arrived. The first appetizer was smoked salmon, as Colin knows we're addicts. (He was the one that got us completely hooked a couple of years ago.)
It didn't last long, and he also wrapped some up for us to take home!
The next appetizer was a plantain dish, which was caramelized and addictive. So sticky and so good, it reminded me of cinnamon buns. The smell as it cooked outside was out-of-this-world; the neighbors were probably tortured with food-envy.
Colin had spent the past while perfecting a jerk chicken recipe, and he wanted us to try it. It had been marinating overnight in a beautiful blend of fresh ingredients.
It's safe to say he created a master recipe, as this was by far the best jerk chicken we have ever had.
We gobbled it up with loaded potatoes, grilled corn, and mahi mahi.
I ate everything on my plate, plus another drumstick, and a bit of the fish too. Everything was so delicious, especially the jerk chicken (and we got some of that to take home too 😜👌).
Dessert was a homemade key-lime pie, which was the perfect way to cap off this incredible meal. Christopher is a BIG time pie lover, so this was right up his alley.
We had a wonderful time laughing, visiting, eating, and laughing some more. They are such a nice couple, and we're already looking forward to the next time we get together.
This evening out was definitely the highlight of our fabulous long weekend - more on our weekend in another post.

Yum, that meal looks fantastic from start to finish. I love jerk chicken so that meal is right up my alley! The plantain dish looks really good, too! The Caribbean hole-in-the-wall place we love has a similar appetizer dish and it's so good!
It was not a long weekend for us as we don't have any long weekends in August in the US. Womp womp. But we are making the weekend of the 19th a long weekend as we are taking that Friday off to go camping which I'm super excited about!
