On Tuesday Christopher went back to work after the long weekend, and I made smoked cheddar bacon mac and cheese for lunch.  It was absolutely scrumptious, as well as super easy.

There were leftovers for Wednesday's lunch, and it reheated nicely.

A couple of times this summer I've met up with Christopher for lunch at a restaurant.  A while back we went to Western Pizza for the buffet:

And today we went downtown to Siam for Thai:

Dinner on Tuesday was lobster, scallops, and a potato/veggie mixture.

Other than that, we've mostly had random dinners trying to use everything up in the fridge, as we have a vacation on the horizon - Vegas baby!!!!!

Lunch and dinner yesterday were both nothing but veggies.  We made a cucumber salad, a tomato salad, and a cheesy potato mixture with salsa.  Our friends Chris and Jessie had given us a bunch of tomatoes, and Christopher used some of them in his homemade salsa.

Breakfasts yesterday and today looked like this:

Banana topped with almond butter and granola is my new fave!

By the time I am reading this you are already in Vegas! Can't wait to hear about what all you eat while you are there!

This weekend was more low key for us which was nice. On Friday I went to a movie (Girls Trip) with friends from book club. Saturday was a low key day as I wasn't feeling great. And then Sunday I did a triathlon relay with some girlfriends which was fun. We went to brunch afterwards at a new-to-me place and then in the evening I made white bean posole verde with tomatillos from my garden which turned out great.
