Cinco de Mayo

Our Cinco de Mayo included a LOT of cilantro ...


Even more than what is pictured ...

I just can't live without the stuff.

We had pico de gallo, with some freshly baked corn tortilla chips.


We also BBQd some fish for fish tacos.


It has been so nice out, and we haven't turned on our air conditioning yet, so we really don't want to turn the oven on much ... that being said, we've been BBQing a lot.  We usually sit out in the backyard every day after work, visiting, having a snack, and eventually cooking dinner.  We've been keeping a close eye on the trees in the yard, watching them day by day as they start to bud, and little leaves start to poke out.  The changing of the seasons really is fascinating.  


Last night we BBQd burgers, and a bunch of veggies.

Yum! Those burgers look so good! We need to grill some soon. We did not have anything Mexican on Cinco de Mayo as we grilled that night but it was really good! We are loving meals off of the grill these days. And I did have Mexican for lunch that day which was super yummy.

Spring has sprung here and it's beautiful! I love all of the flowering trees! I also paid closer attention to the progression of spring this year - it is fascinating to watch the trees budding and the leaves growing!
