Obsessed

I'm pretty much obsessed with Christopher's breakfast potatoes.  They are a weekend necessity around here, and we had them both Saturday and Sunday morning this past weekend.

Close up!

He chops and boils them first, and then cooks them slowly in a pan with oil, fresh herbs, some dried herbs and spices, and hot paprika paste.  They smell amazing and taste even better.

On Saturday we enjoyed them with a veggie omelet (we shared a 2 egg omelet) and bacon.

Sunday, it was breakfast sandwiches with horseradish mayo, mustard, tomato, chicken, and bacon.

Mimosas, coffee, and fresh juice rounded out our breakfasts.

Do you make breakfast potatoes or hash browns?

The breakfast potatoes look so delicious! I prefer breakfast potatoes over hash browns any day!

I prefer breakfast potatoes because it seems like it's easier to get them crispy, which is the way I like them, whereas hashbrowns can get a little mushy/soggy sometimes. Those breakfast potatoes look amazing!

Potato master Chris! Michael also makes excellent potato things around here. I want those breakfast sammiches! We're going to have to do something like that one of these brunches coming up.

Oh delicious! I definitely prefer breakfast potatoes but often get lazy so we end up making frozen hashbrowns from the store. Definitely NOT as good.
