Korean Pulled Pork Sandwiches

Yesterday morning we pulled out the slow-cooker and tossed in the beginnings of the delicious pulled pork sandwiches we would enjoy for dinner.


Korean Pulled Pork Sandwiches

Pulled Pork

2 lb pork roast (or loin)
1 bottle of light coloured beer (we used Richard's white)
salt and pepper
1 tsp of Korean chili powder
1 tsp ginger powder
1/3 cup brown sugar
2 cloves of garlic, sliced

Place the pork in the slow cooker.  Sprinkle the spices and sugar over.  Pour in the beer.  Cook on low for 6-8 hrs.  Remove meat from liquid and shred with a fork.  Stir in the Korean BBQ sauce.

Korean BBQ Sauce 
(approx. - we eyeballed it)

5 T Gochujang paste
2 T Soju (Korean rice wine)
1 T soy sauce
1 T worchestershire
2 T ketchup
2 T ginger
2 T kimchi juice

Mix all together well.  Stir into the shredded pork.

Coleslaw  
(approx. - we eyeballed it)

Approx. 1 cup shredded red cabbage
3 T chopped kimchi
1-2 green onions, sliced
2 T white vinegar
1 tsp soy sauce
1 T brown sugar
1 T fresh ginger, chopped

Mix all together and put on the sandwich with the pork.


Assemble the sandwich with a bit of mayo, the pulled pork, cheese, coleslaw and pickles!  Enjoy!

I love pulled pork - it's delicious! I just put a bottle of sweet baby rays bbq sauce and let it cook all day. Yum!

I don't eat meat but I have made roast in the slow cooker and everyone seems to love it!

I have never made pulled pork as I don't eat much meat, but my brothers make it in their smoker and it is SO GOOD!!!
