Souvlaki-Style Pork Tenderloin with Mixed Vegetables

The newest issue of Canadian Living Magazine is on shelves today, and I was lucky enough to be able to try the cover recipe before this issue hit newsstands. 


This recipe is perfect for a weekday dinner, as it is really easy, and doesn't take more than 30 minutes to whip up.  It is healthy, and the garlic yogurt sauce is the perfect accompaniment to the pork and vegetables.  It totally made the dish.


When eating this I made sure to get a perfect bite with a little bit of pork and a couple veggies, all dipped in the sauce.  Mmmmmm!

When you cook pork tenderloin, make sure to cut off the silverskin.  It literally looks slightly silver, and is not good for eating.  Use a sharp knife, and trim this part - watch those fingers!


Also, give that pork a nice crust!  I can't even begin to explain how good the house smelled when this was browning.  Ooooooh mamma!

I like to use the freshest ingredients possible. 


This recipe makes four servings, and since it's just the two of us, that means leftovers!


We like leftovers.  A lot.

Yum! That looks delicious! I have not made pork tenderloin in well over a year but it is something I really enjoy. I always forget how easy it is to make it, so this post was a good reminder!

We make pork tenderloin about once a month. I like that it cooks so quickly. I'll have to check out this recipe. I like quick and easy.
