What's for Dinner?

D

uring the week the only meal that I get to eat with the hubby is dinner, and so it is my favourite meal of the day.  It is the meal I love to enjoy with friends, and family, and the meal that I have time to cook, and savour with a glass of wine.

Although I have found a love for breakfast through blogging, I have never really enjoyed lunch.  It always seems rushed, and I never have creative lunch ideas.  Dinner, on the other hand, inspires me.  I love trying new creations and spending hours in the kitchen preparing something for the people that I love.

My breakfasts and lunches for the past 2 days have been dull and un-photogenic (green monsters, soup, leftover veggie burrito, yogurt, fruit), but my dinners have been anything but ...

On Monday I made chipotle lime salmon, with basmati rice and a cilantro/onion/jalapeno/lime topping:


This evening I made Moroccan Kefta Mkauouara
(Spicy Egg, Meatball and Tomato Tagine):

This dish was very easy to make, yet very satisfying.  I served it over basmati rice, and topped it with a generous sprinkle of cilantro.  The hubby and I were very pleased with the egg in this dish - it was a nice touch.

I love dinner as well because I get to spend it with my hubby :)Dinner tonight was spaghetti and vegies. It hit the spot!!

When I was working I actually loved lunch! We had a common lunch table that typically attracted upwards of 10 people (who were all very nosy about what everyone else was eating). I made some pretty creative, colorful and most of all healthy lunches in an effort to "show off" hahaha.

Dinner was Mexican pizzas tonight. It is Stephen and mine's last dinner together for a while. Sad! I either like breakfast or dinner. Lunch is always rushed for me, too. Pretty much because I have to make two different lunches at the same time.
Dinner is usually something fun and indulgent and breakfast is just nice, because the apratment is quiet. Everyone is still asleep.
I also love bedtime snack. Usually a cocktai and whatever I feel like eating. I love having a nice end to the day! And a nice buzz...

Omg that salmon looks amazing!

Eric had leftovers and I had a hummus + tomato sandwich while working at the yoga studio. Ha!

Tomorrow night we're making veggie burgers and homemade fries :)

I actually love my lunch! I think its my favorite meal (what am I saying??? I like ALL meals!

But I have never been a huge breakfast person although I never skip it. I'm known to create meals like "mid-dinnack" which is like a midnite snack thats so big like a dinner; usually because of an early dinner earlier that day or I'm simply very hungry!

Yum! I am impressed with what you cook on week nights!! I rarely, if ever, cook on week nights... it's too overwhelming for me on top of working out I guess? Pretty lame...

So my fave meal of the week is Sunday night. That's when I make a big dinner that yields enough leftovers for the week. Some of my favorite things lately have been a slow cooker beef in pomegranate sauce recipe and taco soup (which is ridiculously easy but so yummy).

Tonight for dinner I had some of those chicken ravioli from Costco (the fresh ones, not frozen) with some broccoli and marinara. It was quite good. But most of the time, all I want for dinner is breakfast! Breakfast is my favorite meal. I love all breakfast foods from yogurt (plain or vanilla only, usually mixed together) with cereal and banana, to toast and eggs, pancakes with turkey sausage...its all good:)
Are you getting sick of our miserable weather yet? Gotta love living on the Canadian prairies...

I am much like you where I like to share my meals with family and friends. My lunches are usually leftovers and I do put a lot of thought in to them...luckily I get to eat with good friends each day.
Dinners are such a fun experience though! I love cooking with my husband and sharing in a good meal. While he isn't quite to foodie that I am...we have a good time. Your dishes this week look amazing! I'm drooling!

Dinner by far. Well, actually they all are. But at least dinner I'm away from work...:(.

But, GOD - I WISH I had your talents. I would love to be able to feel content enough to spend time in the kitchen making a different, creative and loving meal - but I always feel that I have so much to do and not enough and fall back on typical stuff....I'm also always anxious around food and eat so much of it WHILE I'm cooking that spending an extra couple of hours in there scare me...

Yep. Issues.

During the week, dinner is my favorite meal. It's the only meal I get to sit and enjoy with my family...breakfast is usually eaten between classes and lunch is shoveled in because I usually have to make copies or something like that! On the weekend, breakfast is my fave because we are always coming up with something yummy to cook!
