Back in Routine: Last Week's Eats

I went back to work on Monday, but waking up for work wasn't too difficult, as I had been getting up around 7:00 a.m. all summer.  I did have a lot less time to lounge around in the morning though.

Breakfast on Monday:


I went out for lunch that first day back, and caught up with a friend who had spent her summer out at the lake.

Dinner on Monday evening was a calzone.  We used wild elk meat, mushrooms, bell pepper, olives, cilantro, spices, and cheese.


This is such a quick and easy dinner to make, and it's very satisfying.  We always serve calzones with sriracha, because we love the spicy touch.


On Tuesday evening we made fish tacos.  I gobbled down two of  'em.


I think I like corn tortillas better than the flour ones; they are especially good with fish tacos.  Loads of sour cream and cilantro were also in there, along with red onion, shredded cabbage, and homemade salsa.

I was at work until about 7:00 p.m. on Wednesday, but came home to a lovely dinner that Christopher had prepared.  He made a yellow Thai curry with shrimp, and served it over noodles.


For lunch on Thursday Christopher and I met up at Afghan Cuisine, which is an excellent restaurant in town.  They have a lunch buffet, which doesn't look that spectacular, but tastes great!


It's such a nice treat to meet him for lunch on a work day; it puts a spring in my step in the afternoon.  This meal kept us full through the day, so we didn't really have dinner, and just nibbled on a snack or two instead.

Our weekend got off to a nice start on Friday evening, when we went to our niece Charlotte's 3rd birthday party.

Then we still had the labour day long-weekend to look forward to!

I can't have flour tortillas so it's a good thing I prefer them! My only complaint is that they break easily and you have to warm them before serving, which is a pain when entertaining! But the taste makes up for it! I LOVE fish tacos. It's such a fast dinner to make so we need to eat them more often!

Let's see, this past week I made a posole verde soup with tomatillos from my garden and leftover pork from Phil's birthday dinner. Then this weekend we grilled a simple meal of cheeseburgers with corn on the cob & cheesy zucchini rice. This morning I made a sweet potato hash with chicken sausage, onions, and green pepper from my garden! And tonight I'm making white chicken chili in the crockpot. I have not been cooking much lately as I haven't been feeling well thanks to my stupid RA so I tried to cook a bit more over the last several days as it's so good for my mental health! I also made a loaf of zucchini bread with zucchini from my garden and shared most of it with friends and Phil's mom. Everyone said it was really good and didn't seem to notice it was GF! :)
