Last Week's Eats

We know we're ready to go home from a vacation, even though we might not recognize it at the time, when we start talking about all the things we're going to cook when we get home.  We can't be away from our kitchen for too long without missing it.  Last week we made sure there were plenty of vegetables in our meals.

Last Monday evening we had huge salads, topped with chicken:


On the Tuesday we made broccoli, arugula, brussels sprout bowls, with crispy tofu, green onions, and an Asian sauce:


Wednesday's dinner was a basic chili:


On Thursday evening we made a delicious rice/veggie bowl.  We cooked the beet and zucchini in a pan until softened, and then sauteed kale with some garlic for a couple minutes.  We put this in a bowl with corn, brown rice, and mashed sweet potato.


We then poured a Thai curry sauce over the rice.


Soooooo good!  We'll be making this dish again for sure.


On Friday evening we BBQd salmon, asparagus, and potatoes:


After dinner, Christopher supervised while I baked up a batch of peanut butter cookies for my mom.  She was talking about PB cookies the last time we were there, so I promised her I'd bring her some when we came next.  We were heading to see her the next morning.

That was sweet of you to make some cookies for your mom. I bet she really appreciated that! That rice and veggie bowl looks amazing! I had something similar last night with leftovers from my bach party mexican feast! I had cilantro lime rice with grilled veggies and other toppings from the taco bar. It was soooo good!

Last week was a blur. Work was busy and I had several evening commitments and then was preparing the house for the bach party (we had it at our house).
