You begin by emptying out an eggplant, and cutting up the inside (along with some other veggies).
You cook up the veggie mixture and curried shrimp separately ...
Then combine them inside the eggplant.
Top everything with grated Havarti cheese. Havarti cheese is excellent with Indian flavours, as it is mild, melts beautifully, and really compliments the curry flavour.

That sounds pretty good! I don't really love eggplant, but maybe it's because I haven't found a way to cook it that I love- I find the texture a little spongey?
We had shrimp last night too! Balsamic shrimp with quinoa pasta and tomato and mozzarella. Tonight I had some organic tortilla soup with sliced avocado on top- my husband worked late so it was a lazy, single girl dinner- but it was delicious!

Yum, that looks delicious! I have made stuffed zucchini before but not stuffed eggplant, so I will have to try that out! I have cooked eggplant before but I don't make it often. My favorite dish with eggplant in it is ratatouille. Last night for dinner we had chicken breasts that were marinated in a balsamic basil marinade with some roasted carrots and baby potatoes. Tonight I am trying a new-to-me Thai restaurant with a girlfriend.
I haven't really found that I enjoy eggplant that much, but this looks pretty amazing!
