Haystacks

It had been a while since I had haystacks, a favourite meal from my childhood.  My family used to run a summer camp, and I also attended each year as a camper.  Every kid's favourite meal during the week was always haystacks.  


Haystacks

All you do is layer:

cooked rice
shredded cheese
taco beef (lean ground beef with taco seasoning)
tomatoes
black olives (optional - use whatever "taco" fillings you like)
salsa
sour cream
crunched tortilla chips on top

Warning:  They get big fast! 
Amounts don't matter, and you can add or omit toppings as you like.


This was our dinner tonight, and there is still some left for me to take for lunch tomorrow.

Yum - that looks good! It's kind of like an upside down taco salad as I usually have my chips on the bottom. I love simple meals like that!

I went to 4H camp when I was young and then I went to music camp when I was in middle school.

I never really went to camp. I think I missed out on some big life experiences.

Looks pretty good. Haystacks at our place are a no cook cookie though.

I have never heard of haystacks but you know what? My little guy would LOVE these! I'm pinning this for future reference. Thanks so much for this idea!!! I did attend camp but we had to pack our own food :(

I've eaten meals like this countless times without knowing it was a "haystack"! As a kid, I used to detest eating crunchy tacos whole, and always made a plate like this. So good!
