Summer Breakfasts

Summer breakfasts are always more leisurely and relaxed than workday breakfasts.  I like taking my time in the morning, making fresh juice ...

 

Or delicious baked eggs with suuuuuper crisp bacon.


Sometimes I pick up a fresh sour dough loaf for the perfect French toast.

 
 

Or spread avocado on one slice of toast and broil Gruyere over another.

 

Today, I enjoyed eggs, fried potatoes and bacon. 


I wish every breakfast could be a summer breakfast.

Yum Jolene. How do you make the baked eggs? Do you precook the veggies?

Breakfast is my favourite meal but I wake up too late to make something good. Tomorrow I'm going to make an effort to cood a good (maybe not healthy) breakfast. Thanks for this post.

@ Jennifer - I don't precook the veggies. I just chop them up small and throw them in the dish with eggs, and some cheese, and then bake until set. I think I have a recipe under my "recipes" tab that has the time and temp.

i never tried making french toast with sour dough bread. interesting. i had a boring breakfast this morning. Cereal, banana and milk.

Yesterday I had toast with peanut butter + banana before my long run, and then 3 scrambled eggs + salsa after my run! My favorite part about summer breakfasts is that I am usually able to savor my coffee instead of quickly drinking a cup and putting the rest in a thermos to take to work!

Sometimes I sleep in so much I miss breakfast. As has happened this morning. But I wish I would have had that! :)

I pretty much still have oatmeal every morning, and lately I've been having a green monster on the side, in place of yogurt and a piece of fruit. Having spinach first thing makes me feel virtuous!
