Chicken with a Jalapeno Cream Sauce

I like chicken best when it is covered in a fabulous sauce.  The dinner I made yesterday was pretty much perfect.  


I used this recipe and only made one change substituting Gruyere cheese for the Parmesan.  This chicken with jalapeno cream sauce was not spicy at all, although it had a fabulous jalapeno taste.  The sauce is also basically fat free (if you care about that kind of thing - clearly I don't) besides a couple tablespoons of cheese and a spot of butter - not kidding!

This Tupperware thingy was perfect for mincing up the jalapeno, garlic and shallot.  Seriously, it works like magic.


(*Note - although I use some Tupperware products, please never invite me to a Tupperware party or any other party with someone trying to sell me something.  Your friend points will drop by 10.  You can give me the Tupperware catalogue however, and I may drop a couple hundred dollars.  *Note - this only applies to Tupperware.  Give me a catalogue for jewelry or anything else and I will start feeling rather stabby).

I cooked up two boneless, skinless chicken breasts (after drying them well and seasoning with S&P), in a cast iron pan about 8 minutes per side.


The jalapeno, garlic, shallot mixture was cooked up in a bit of butter until fragrant and awesome.  Then went in a bit of whole wheat flour, some fat free condensed milk, a bit of skim milk and about 2 T of Gruyere.

I let the sauce thicken on the counter for a couple minutes (it gets thicker and thicker the longer it sits) and then poured it over the chicken and some rice.  I garnished this with cilantro, because let's face it, everything tastes better with cilantro ;-)

 

After I was done devouring this chicken dish, there was only one thing I wanted ... more.

Excuse me while I go bathe in the leftover sauce.

Do you like chicken?  Do you prefer it with sauce (or gravy) like I do?
What are your thoughts on girly parties like Tupperware, Silpada, etc. etc. etc.?  Do they make you want to vomit, or are you one of "those ones" that invites people to such things?  Hehe!

That tupperware thingie is adorable! I never go to those girly parties...mainly because absolutely none of my friends are into that. Not only are half of my friends guys, but the girls tend to fall more on the "crazy artsy" side of things. :) I'm certainly not opposed to them though!

That sauce looks purty...and I agree with your cilantro sentiments!

I love chicken and will eat it with almost anything on it! HAHA I'm the same way with friends trying to sell me stuff!

I like sauce on my chicken too, and the richer and more flavorful the better because I don't actually like chicken, haha.
I hate those parties! It's so awkward.

I'm not a big sauce person, and I hate home parties! Though I'm not necessarily opposed to buying the stuff. I also don't love showers, baby, wedding, or otherwise.

I used to LOVE chicken...I ate it constantly. But now I'm mostly veg except for fish. And I don't miss it surprisingly!

Yum, that looks delicious! I do prefer my chicken with some sort of sauce, but prefer something tomato based, usually, as I dairy gives me stomach problems!

I do not like those catalog parties. They make me feel pressured to buy things and the items (especially jewelry) are really expensive!!
