Veggie Eats and New Shoes

On Thursday I went back to work after two weeks off.  I made some scrambled eggs for breakfast and enjoyed them with a chunk of focaccia bread.


Lunch was a few perogies, an orange, and some yogurt.

Dinner was sweet potato burritos, which is one of my favourite vegetarian meals.


On Friday I needed a boost of energy in the morning, so I had a simple Green Monster (1 cup almond milk, 2 cups spinach, 1 pack Amazing Grass, 1/2 frozen banana, 2 T hemp hearts).  Lunch was a crappy soup/pizza buffet at a local pub, but dinner was awesome! 

I made a sweet and spicy acorn squash dish by experimenting with some ingredients.  I don't know the exact amounts of everything I put in, but I can give a rough estimate.

Sweet and Spicy Acorn Squash

1 T veg. oil
2 cups cubed acorn squash
1 small onion, chopped
3/4 - 1 cup veggie broth
1.5 T sugar
1.5 T yellow mustard seed
1 T soy sauce
1/2 tsp garlic
1/2 tsp hot red pepper flakes
salt and pepper to taste

Heat the veg. oil.  Add the onion and squash and cook until the onion is becoming translucent and the squash is browning a bit.   Add about 3/4 cup veggie broth.  Add 1.5 T sugar, 1.5 T yellow mustard seeds, 1 T soy sauce, 1/2 tsp garlic powder, 1/2 tsp hot red pepper flakes. Season with salt and pepper.  Taste and add other flavours as desired. (Remember - all the amounts are approximate because I was experimenting and didn't measure).  Cook uncovered until all liquid is gone (takes about 20 min.)


We served this squash over quinoa, with green beans on the side.


Last night I went shoe shopping!!  
There were some amazing sales, and I just couldn't resist these two cute pairs:

After the shoe shopping the hubby and I went to "Love and Other Drugs."  This movie was AWESOME!  One of the best movies I have seen in a while.  I loved it.  I read some bad reviews about it, but I don't agree at all - I was super impressed with it, as was the hubby.  We left the theater with smiles on our faces and talked about the movie the whole way home.

This morning we had pancakes for breakfast and then headed to a Karen New Years celebration at a local church.  I teach a lot of Karen people, and was invited by a student to come to the celebration, along with a few other teachers.  It was really cool, and our lunch was the biggest spread of Burmese/Thai food that I have ever seen.  

This evening we are going out to celebrate one of our best friend's 30th birthday!

I love the ruffle detailing on those black shoes! I havent seen L&OD but I REALLY wanted to...I think I'm gonna have to wait till it hits the redbox though since it's already out of our theaters :/

I haven't seen it but would like to. I imagine I'll catch it once it comes out on DVD. I'll be doing schoolwork and going to watch my son's hockey tourney. It'll be nice. :)

There is literally nothing better than getting a new pair of shoes.

I haven't seen that movie yet!!! It came and went from MJ theatres very fast...I will have to catch it on dvd!

I missed the sweet potato burritos the first time around, but both that and the squash are now bookmarked now for future kitchen times. It all looks like delicious comfort food!

I haven't seen Love and Other Drugs yet but I've heard so many good things about it, it's ridiculous!

I love having scrambled eggs for breakfast! What did you season them with? Is that just salt and pepper? A sweet potato burrito is a great idea! Even though the reviews weren’t that good, I still want to see "Love and Other Drugs” too.

Those shoes are adorable. And that squash dish looks awesome! Yum! I get intimidated by squash because I fear I do not have the arm strength to cut it up!!!
