Weekend Things & Canada Day!

Breakfasts this weekend included this sausage and egg skillet:


And egg in a hole with hot paprika potatoes:


The rest of our eats over the two days were random and snacky.  We had coconut shrimp:


Jumbo scallops:


Smoked salmon:


And Canada Day, red and white nachos!


And that's about it.  We weren't too hungry for actual meals, but between the two days these snacks were just right.

We spent Saturday night making a Canada Day cake pop basket to take out the next day to a get-together.

 
 

The gathering got cancelled though, so we have a lot of cake pops to eat!  My sister dropped by the house and took about 1/3 of them off our hands - thank you Leah!

Somehow we'll manage with the rest ;-)

Instead of leaving the house for Canada Day like we usually do, we stuck around, did some yard work, and then relaxed in the yard.  We caught the fireworks from our front step, which was nice, as it got pretty chilly out last night (for July).

It was a great weekend, but it's not over!   Today is a holiday (in lieu of Canada Day), so Christopher is home, and we have brunch plans with friends, etc.

Those cake pops look so good!! My SIL has some GF ones made for my baby shower. We kept the leftovers in the freezer and they lasted us for weeks as I was following the gestational diabetes diet so 1 cake pop was about all I could have each night. But they were a really yummy treat!

I’m at my parents lake home for the 4th. We had family over yesterday and grilled brats and hamburgers. We have more family arriving tomorrow and will have an even bigger celebration on Saturday. Phil had to work but he is coming up on Friday night. It’s been nice to get so much family time but we miss daddy!
