Backyard Dining

Last night we had my sister and Riley (and our little nephew) over for dinner.  Since summer is so short in Saskatchewan, we like to take in as much of it as we can, so we planned to eat outdoors.  It was supposed to storm in the late afternoon, but as luck would have it, that never happened.

To start we had a couple of cheeses that I had picked up from Takeaway Gourmet (Oveja Con Trufa, and Clos Du Berry).  They are two of our favourites, and Leah and Riley loved them as much as we do.

Alongside the cheeses we also had edamame dip with rice crackers:

For dinner we had banh mi tacos (with grilled pork), a tomato bocconcini salad with homegrown basil, and a cucumber salad.

So fresh.  So summery!

Dessert was a caramel banana cream pie.

It was a gorgeous evening outside, and we had a nice visit with family.

The leftovers for lunch today were so good!

How is your week going?  When was the last time you had tacos?

Yum! That looks delicious as usual! That's great that it didn't end up storming. We rarely eat outside since we just have a tiny bistro table but when we move (someday! Doesn't seem to be likely to happen anytime soon) I want to buy a patio set so we can eat outside.

We actually had tacos last night! We made shrimp tacos. It was such an easy meal as shrimp cooks so fast. I sautéed some onions and peppers for a taco topping and my mom made some green beans that she brought from her garden. I'm kind of trying to 'automate' meal planning so that it's easier and less of a brain drain for me. So I think we'll likely have a taco night each week - at least for the foreseeable future!
