Beer Mac and Cheese

I have been loving fruit and toast for breakfast lately, especially if the toast is made with homemade bread (as in the second picture).


I had leftover healing chicken soup for lunch today, and beer mac and cheese for dinner!


The mac and cheese was made with rice pasta, and I couldn't tell the difference - gluten free is just as good!

I love cooking (and baking) with beer.
Time to grab a grapefruit or some snap peas for an easy evening snack.

Beer Mac & Cheese?! Those are two of my husband's favorite things, so this definitely sounds like a winner. Have you heard of the blog Elefantitas Alegres? She posted about a pumpkin mac & cheese that looks really good as well. Looks like I need to make both soon!

And I've never cooked with beer before, so this will be a first.

I do not ever cook/bake with beer because I don't really like the taste, and I don't drink beer, so I never have it in the fridge!!

Have you tried quinoa pasta? It's even been than rice pasta! It's my fave GF pasta!!!

This weekend I am headed to Chicago!! You should definitely visit some day - it's such a fun city!!!

@Suki - it was some light beer, can't remember. I eat gluten, no problems with it ... just buy rice pasta sometimes :-)

We usually buy brown rice pasta nowadays, too. We're not gluten intolerant but brown rice pasta is a little lighter. I like how you said you like cooking and baking with beer...I usually drink it before I ever get that opportunity. :) But I've made chili with beer before and it was awesome. I'll have to give beer bread a go.

I love cooking with beer! This weekend is packed. I have dinner out tonight and a lunch and dinner out tomorrow, for my birthday. I also hope to check out an Andy Warhol exhibit, do some shopping and see Beauty and the Beast 3D!

I've never cooked with beer before. Neither the hubby nor I are beer drinkers - does that mean there's a good chance that I won't like it?

@ Anne Marie - It does have a bit of a beer taste, so if you cannot stand the taste of beer, then you probably wouldn't like it.

i think i used beer in some chili before...but a LONG time ago. We don't drink beer so it's a waste if we buy a six pack or a whole can! BTW you dinner with friends? amazing as always!

My Mom's beer bread is one of my most favorite things in the world! I remember being a kid and stuffing my face with it, thinking I was so "badass" haha.
